INGREDIENTS
1tablespooncooking oil
4ouncefavorite short pasta, I used smaller penne
2sausages casings removed, or mild italian ground sausage, about 14 ounce
½cupyellow onion, diced
6cherry tomatoes, halved
Parmesan cheese for serving
salt and black pepper to taste
INSTRUCTIONS
Boil salted water for the pasta. Once boiling, add pasta and cook for 7-8 minutes until almost al dente.

Add oil to skillet. Cook onion over medium heat until lightly softened. Add sausage and cook for 4-5 minutes until almost cooked. Add tomatoes and cook for 5-8 minutes until tomatoes wrinkle then reduce heat.
2 sausages casings removed, ½ cup yellow onion, 6 cherry tomatoes, 1 tablespoon cooking oil
Carefully transfer pasta to skillet with 2-4 tablespoons of pasta water added gradually. Toss everything together off heat.
Optionally, stir in parmesan or season with salt and pepper, garnishing with parmesan and fresh parsley.
Parmesan cheese for serving, salt and black pepper to taste
NOTES
To Store. In the fridge, this recipe stays fresh for up to 3 days. While I'm not fond of freezing pasta because of potential texture changes upon thawing, it's still an option for leftovers, though not as ideal as fresh or reheated from the fridge.
This recipe is for 1 good sized serving or 2 smaller.
