This slow cooker beef and broccoli is an easy crockpot dinner with tender beef, simple sauce, and fresh broccoli. Perfect for busy weeknights and beginner cooks.

  1. Add beef and base: Add sliced beef, onion, garlic, beef stock, sauce, and brown sugar to the slow cooker and stir gently.
    1½ pounds flank steak, 1 medium yellow onion, 2 cloves garlic, ½ cup beef broth, ¼ cup soy-free stir-fry style sauce*, 1 tablespoon brown sugar
  2. Cook: Cover and cook on low for 5–6 hours until tender.
  3. Make slurry: Mix cornflour with 2 tablespoons cold water.
    1 tablespoon cornstarch
  4. Thicken: Stir slurry into the slow cooker.
  5. Add broccoli: Add broccoli during the last 30 minutes and cook until tender but vibrant.
    10-11 ounces broccoli florets
  6. Finish: Taste and adjust seasoning if needed. Serve hot over rice or noodles.

Notes

  • Slice the beef thinly to ensure it turns out tender instead of chewy.
  • Use low sodium broth, as the final seasoning will depend on both the broth and sauce.
  • Add the broccoli at the end of cooking to keep it bright and not overcooked.
  • Do not skip the cornstarch slurry, as it creates the thick, glossy sauce.
  • When reheating, add a splash of water or broth to loosen the sauce and restore the texture.
  • *For a regular version of the sauce (with gluten), use soy sauce with a small drizzle of honey or maple syrup, or substitute teriyaki or a similar sauce.
