Prep the apricots: Wash and slice them in half. Remove the pits.
1 pound apricots
Preheat the oven: Set it to 400°F (200°C). Grease your baking dish with a little butter.
Arrange the fruit: Place apricots cut side up in the dish.
Add the spice mix: In a small bowl, mix coconut sugar, cinnamon, cardamom, and salt. Sprinkle it evenly over the apricots.

Add butter: Top each apricot half with a tiny piece of butter.
3 tablespoon butter
Bake: Place in the oven for 15–17 minutes. The apricots should soften and get lightly golden around the edges.
Top and serve: Remove from the oven, sprinkle with crushed graham crackers and almonds, and serve warm. Add a scoop of vanilla yogurt or ice cream if you'd like!
