Baked Apricots With Coconut Sugar And Butter

This Quick Baked Apricot Dessert is an easy summer treat made with fresh apricots, butter, cinnamon, and crunchy toppings. Ready in under 30 minutes.

Ingredients
  

  • 1 pound apricots
  • 3 tablespoon butter leave a little for greasing the baking dish
  • 2 tablespoons coconut sugar or regular brown sugar
  • ¼ teaspoon cinnamon
  • 1 pinch of cardamom ground
  • 1 pinch of salt kosher
  • 1-2 tablespoon graham crackers crushed
  • 2 tablespoon toasted almond flakes
  • Vanilla yogurt or vanilla ice cream for serving optional

Method
 

  1. Prep the apricots: Wash and slice them in half. Remove the pits.

  2. Preheat the oven: Set it to 400°F (200°C). Grease your baking dish with a little butter.
  3. Arrange the fruit: Place apricots cut side up in the dish.
  4. Add the spice mix: In a small bowl, mix coconut sugar, cinnamon, cardamom, and salt. Sprinkle it evenly over the apricots.

  5. Add butter: Top each apricot half with a tiny piece of butter.

  6. Bake: Place in the oven for 15–17 minutes. The apricots should soften and get lightly golden around the edges.
  7. Top and serve: Remove from the oven, sprinkle with crushed graham crackers and almonds, and serve warm. Add a scoop of vanilla yogurt or ice cream if you'd like!

Notes

Grilled Apricots Version

If you don't want to turn on the oven, these grilled apricots are just as delicious and perfect for summer cookouts.

How To Grill Apricots

  1. Preheat your grill to medium heat (about 375-400°F).
  2. Wash the apricots, cut them in half, and remove the pits.
  3. In a small bowl, mix together the coconut sugar, cinnamon, cardamom, and salt.
  4. Brush the cut sides of the apricots with a little melted butter, then sprinkle with the spice mixture.
  5. Place the apricots cut side down on the grill grates. Grill for 2-4 minutes until grill marks appear.
  6. Carefully flip them over and add a small piece of butter to each half.
  7. Continue grilling for another 2-4 minutes until the apricots are tender but still hold their shape.
  8. Remove from the grill and transfer to a serving platter.

To Serve

Sprinkle with crushed graham crackers and toasted almond flakes. Serve warm with vanilla yogurt, whipped cream, or a scoop of vanilla ice cream.
My tip: Keep an eye on them during the last few minutes. Very ripe apricots cook quickly and can become too soft if left on the grill too long. You want them tender and juicy, not mushy. 😊
