Ingredients
- Apricots - Use ripe but still firm apricots. If they're too soft, they'll get mushy in the oven. You can also use fresh peaches or nectarins.
- Butter - Adds richness and helps caramelize the fruit. I save a little for greasing the pan too.
- Coconut sugar or brown sugar - Either works! I like the light caramel taste of coconut sugar.
- Cinnamon and cardamom - These two spices make a big flavor impact. Just a pinch of cardamom goes a long way.
- Salt - A small pinch of kosher salt balances the sweetness.
- Graham crackers - Crushed on top for a little crunchy crumble. You only need a bit.
- Toasted almond flakes - I love the nutty crunch. Toast them ahead of time or buy them pre-toasted.
- Vanilla yogurt or vanilla ice cream (optional) - For serving, if you want something creamy on the side.

How To Bake Apricots


- Prep the apricots: Wash and slice them in half. Remove the pits.
- Preheat the oven: Set it to 400°F (200°C). Grease your baking dish with a little butter.
- Arrange the fruit: Place apricots cut side up in the dish.
- Add the spice mix: In a small bowl, mix coconut sugar, cinnamon, cardamom, and salt. Sprinkle it evenly over the apricots.
- Add butter: Top each apricot half with a tiny piece of butter.
- Bake: Place in the oven for 15-17 minutes. The apricots should soften and get lightly golden around the edges.
- Top and serve: Remove from the oven, sprinkle with crushed graham crackers and almonds, and serve warm. Add a scoop of vanilla yogurt or ice cream if you'd like!

If you don't want to turn on the oven, these grilled apricots are just as delicious and perfect for summer cookouts.
How To Grill Apricots
- Preheat your grill to medium heat (about 375-400°F).
- Wash the apricots, cut them in half, and remove the pits.
- In a small bowl, mix together the coconut sugar, cinnamon, cardamom, and salt.
- Brush the cut sides of the apricots with a little melted butter, then sprinkle with the spice mixture.
- Place the apricots cut side down on the grill grates. Grill for 2-4 minutes until grill marks appear.
- Carefully flip them over and add a small piece of butter to each half.
- Continue grilling for another 2-4 minutes until the apricots are tender but still hold their shape.
- Remove from the grill and transfer to a serving platter.
Tips
- Use firm-ripe apricots - Too soft and they'll collapse in the oven.
- Don't skip the butter - It helps the apricots caramelize and adds richness.
- Make it nut-free - Skip the almonds or use sunflower seeds if needed.
- Try a different fruit - Peaches, plums, or nectarines also work beautifully.
