Ingredients
  

  • 1 pound ground chicken or turkey
  • ¼ cup breadcrumbs
  • 1 large egg
  • ½ cup parmesan grated
  • 2 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • black pepper to taste
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika optional, but great for flavor
  • chopped fresh parsley for garnish

Method
 

  1. Preheat the oven: Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Mix the ingredients: In a bowl, combine all the ingredients together and mix well.
  3. Form the meatballs: Shape the mixture into small meatballs, about 1 ½ tablespoons each. You should get around 22-25 meatballs.
  4. Bake the meatballs: Place the meatballs on the prepared baking sheet and bake for 23-25 minutes, or until they are fully cooked. Enjoy!

Notes

  • To Store. Once baked, let the chicken meatballs cool completely. Store them in an airtight container in the refrigerator for up to 3 days.
  • To Reheat. To reheat, simply bake at 400°F (204°C) for 10-12 minutes, or until heated through. For extra moisture, you can also heat them in a skillet with a bit of sauce.
