Ingredients

  • 2 large large pears
  • 2 cups arugula
  • 1-2 teaspoon extra virgin olive oil spray
  • 2 oz blue cheese I used Gorgonzola
  • cup pecans or walnuts, chopped
  • 1-2 tbsps honey
  • ¼ teaspoon red chili flakes
  • flaky salt for garnish, optional
  • 1 ½ tablespoon dried cranberries chopped

Method

  1. Preheat your oven to 400℉.
  2. Slice the pears in half lengthwise and scoop out the core and seeds. Place the pears in a cast iron skillet or baking dish, cut side up. Drizzle with olive oil, then flip them cut side down.
2 large large pears, 1-2 teaspoon extra virgin olive oil
  3. Bake the pears for 15 minutes.
  4. Remove the skillet from the oven and turn the pears cut side up. Fill each pear with blue cheese, nuts, and cranberries. Bake for another 7–8 minutes, until the cheese starts to melt.
2 oz blue cheese, ⅓ cup pecans, 1 ½ tablespoon dried cranberries
  5. On a serving platter, arrange a bed of arugula and lightly spray it with olive oil. Place the baked pears on top, drizzle with honey, and garnish with more pecans, cranberries, red chili flakes. To intensify all the flavors, you can sprinkle some flaky sea salt on top.
2 cups arugula, 1-2 tbsps honey, ¼ teaspoon red chili flakes, flaky salt
  6. Optional: Instead of dried cranberries, add a dollop of cranberry sauce—about 2 teaspoons per pear—for a festive twist.

Notes

  • To make a caramelized version of this dish, sprinkle some brown sugar over the pears before baking. This adds a deeper level of sweetness and creates a beautiful caramel color.
  • For an added crunch, top the baked pears with chopped walnuts or almonds before serving. The nuttiness pairs well with the creaminess of the cheese and adds texture to each bite.
  • Don't limit yourself to just blue cheese - try experimenting with other flavor combinations like brie and honey or gorgonzola and dried cranberries for a seasonal twist. The possibilities are endless!
