INGREDIENTS
2skinless chicken breasts
1tablespoonsolive oil
½teaspoonItalian seasoning
½teaspoonsalt, or to taste
1pinchcracked pepper, or to taste
2teaspoonsminced garlic
1cupsgrape tomatoes, or cherry tomatoes, halved
2tablespoonsbalsamic vinegar
½tablespoonsbrown sugar , packed
½cupmozzarella cheese , shredded
1tablespoonsfresh parsley chopped, or basil, to garnish
½teaspoonssmoked paprika
INSTRUCTIONS
Preheat your oven to 220°C (430°F).
Place the chicken breasts in a baking dish and drizzle with olive oil. Season generously with Italian seasoning, salt, pepper, and paprika.
Rub the seasonings evenly over each breast, then arrange the tomatoes around the chicken in the dish.
In a bowl, whisk together the balsamic vinegar, sugar, and garlic until well combined. Pour this mixture over the chicken breasts, turning each breast to ensure they are evenly coated in the sauce.
Bake the chicken in the preheated oven for 20-25 minutes, adjusting the time based on the thickness of your chicken breasts, until they are no longer pink in the center.
Sprinkle the chicken with cheese and broil (or grill) for 4-5 minutes, or until the cheese is melted and golden.
Garnish with parsley and serve the chicken with rice or pasta, drizzled with the pan juices.
NOTES
I prefer to use fresh mozzarella cheese for this recipe as packet mozzarella doesn't have the same effect.
