Balsamic Baked Chicken Breast with Tomatoes and Mozzarella Cheese is an easy and delicious Italian-inspired chicken dinner recipe that comes together in 30 minutes!

The high-protein chicken in this dish easily makes it one of my favorite chicken and tomato recipes.

It offers a healthy main meal that's loaded with incredible flavor thanks to the tangy balsamic glaze marinade, juicy halved tomatoes, and melted mozzarella cheese topping!

Why This Balsamic Chicken With Tomatoes And Mozzarella Is The Best

💖 Quick and Easy: This tomato and chicken recipe takes less than 35 minutes to prepare—perfect for busy midweek dinners.

💖 Healthy and Delicious: Who said a nutritious dinner recipe couldn't also be incredibly flavorsome? This balsamic glazed chicken recipe uses skinless chicken breast, which is high in protein and low in fat and calories. 

💖 Versatile: Make easy swaps with the recipe ingredients to suit your preferences.

Ingredients

  • Chicken - I've used boneless skinless chicken breast in this balsamic chicken recipe, but you could use boneless skinless chicken thighs instead if you prefer. 
  • Olive oil - Use high-quality olive oil to drizzle over the chicken pieces.
  • Seasoning and spices - I've used Italian seasoning, salt, cracked pepper, and smoked paprika to flavor this dish. These spices and seasonings are likely already in your pantry.
  • Minced garlic—Freshly minced garlic always provides the best flavor, although you can use pre-minced garlic if necessary.
  • Tomatoes - Use juicy grape tomatoes or cherry tomatoes, halved. Sundried tomatoes are another option. 
  • Balsamic vinegar - This baked chicken breast recipe wouldn't be the same without this crucial ingredient! You can also make a batch of my balsamic glaze and use it instead of balsamic and brown sugar in this recipe.
  • Brown sugar - I've used packed brown sugar to balance the sharp balsamic chicken marinade. Feel free to use honey instead for a honey balsamic chicken reduction. 
  • Mozzarella cheese—Always shred your cheese from a block for the best flavor and to ensure that it melts well. Crumbled feta cheese can also be added as a topping to this easy chicken dish.
  • Herbs - Use freshly chopped parsley or basil as a light garnish to this balsamic vinegar chicken breast recipe.

How To Make This Oven Baked Balsamic Vinegar Chicken

  1. Season the chicken breast: Place the breasts in a baking dish and drizzle them with olive oil. Sprinkle the seasonings and spices over and rub them into the meat. You can use 8 or 9-inch baking dish that can hold about 2 quarts.
  2. Add the tomatoes: Place the tomatoes around the chicken breasts.

  1. Make the balsamic marinade: Combine the ingredients for the balsamic vinaigrette marinade in a small bowl and then pour it over the chicken, turning it over to ensure the sauce covers all sides.

  1. Bake the chicken: Bake the chicken in the preheated oven for 20-25 minutes at 430°F.
  2. Top with cheese: Remove the chicken from the oven and sprinkle the fresh mozzarella cheese over it. Return the chicken to the oven and heat it under the broil (or grill) setting for 4-5 minutes. 
  3. Garnish and serve: Garnish with freshly chopped parsley and serve the chicken with your favorite vegetable side dish.

Tips

  • Shredded cheese - Avoid packed pre-shredded mozzarella cheese, as it doesn't have the same flavor as fresh mozzarella. 
  • Balsamic glaze - Feel free to follow my simple balsamic glaze recipe for this balsamic chicken breast dish. 
  • Internal temperature - Use a meat thermometer to check the internal temperature of the chicken. This is particularly helpful if you need to know whether the chicken is ready. Insert the instant read thermometer into the thickest part. It's ready when it reads 165 degrees F. 
  • Uniform size - Try to use the same size and thickness of chicken breasts so that they cook evenly and at the same rate. You can use a meat mallet if needed.

Freezing And Storing Instructions

Store leftover balsamic chicken breast in an airtight container in the fridge for up to 5 days. Reheat them in the oven, covered, or use chicken breasts from this baked balsamic chicken breast recipe in other dishes during the week. 

Add the chicken to an airtight container or freezer-safe bag and store it in the freezer for up to 3 months. Thaw the frozen chicken breasts in the fridge and reheat to use again.

INGREDIENTS
  

  • 2 skinless chicken breasts
  • 1 tablespoons olive oil
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt, or to taste
  • 1 pinch cracked pepper, or to taste
  • 2 teaspoons minced garlic
  • 1 cups grape tomatoes, or cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar
  • ½ tablespoons brown sugar , packed
  • ½ cup mozzarella cheese , shredded
  • 1 tablespoons fresh parsley chopped, or basil, to garnish
  • ½ teaspoons smoked paprika

INSTRUCTIONS
 

  • Preheat your oven to 220°C (430°F).
  • Place the chicken breasts in a baking dish and drizzle with olive oil. Season generously with Italian seasoning, salt, pepper, and paprika.
  • Rub the seasonings evenly over each breast, then arrange the tomatoes around the chicken in the dish.
  • In a bowl, whisk together the balsamic vinegar, sugar, and garlic until well combined. Pour this mixture over the chicken breasts, turning each breast to ensure they are evenly coated in the sauce.
  • Bake the chicken in the preheated oven for 20-25 minutes, adjusting the time based on the thickness of your chicken breasts, until they are no longer pink in the center.
  • Sprinkle the chicken with cheese and broil (or grill) for 4-5 minutes, or until the cheese is melted and golden.
  • Garnish with parsley and serve the chicken with rice or pasta, drizzled with the pan juices.

NOTES

  • I prefer to use fresh mozzarella cheese for this recipe as packet mozzarella doesn't have the same effect.

Balsamic Chicken Breast: Frequently Asked Questions

How long do you bake chicken breast in the oven?

This depends on the thickness of the chicken, but generally, chicken in the oven will take 15-20 minutes or about 8 minutes per side. When you remove the chicken from the oven, it should not be pink inside.

Do I have to rest my chicken?

    it does not tell you how much red onion to use. no red onion in ingredients list. but directions tell you red onion.
