Ingredients
  

Chicken Marinade
  • 1 pounds chicken tenders or chicken breast cut into thin strips
  • ¼ cup mayonnaise
  • 1 tablespoons Dijon mustard
  • 1 teaspoon fresh garlic minced or pressed
Breading mixture
  • ½ teaspoon salt
  • teaspoon pepper
  • ½ cup panko breadcrumbs
  • ½ cup regular breadcrumbs or Italian crumbs!
  • ¼ cup Parmesan cheese or similar grated

Method
 

  1. Marinate the chicken: Combine mayonnaise, Dijon mustard, and minced garlic. Toss the chicken strips in the mixture, ensuring they’re well-coated. Let them sit for at least 15 minutes while you prep the breading.

  2. Prepare the breading: In a shallow dish, mix panko, breadcrumbs, Parmesan cheese, salt, and pepper.
    ½ teaspoon salt, ½ cup panko breadcrumbs, ½ cup regular breadcrumbs, ¼ cup Parmesan cheese or similar, ⅛ teaspoon pepper
  3. Bread the chicken: Roll each marinated chicken tender in the breadcrumb mixture, pressing gently to ensure an even coating.
  4. Air fry: Preheat your air fryer to 400°F. Place the breaded chicken tenders in a single layer in the basket. Spray the tops with cooking spray and cook for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
  5. Enjoy your crispy, golden chicken tenders hot out of the air fryer!

Notes

  • To Store. Let them cool completely before storing. Place them in an airtight container and refrigerate for up to 3-4 days.
  • To Freeze. Follow the same steps as above and store in a ziplock bag for up to 1 month.
  • To Reheat. Reheat in the air fryer at 375°F for a few minutes to restore their crispiness.
