Preheat your air fryer (or Ninja Foodi) to 375 degrees Fahrenheit according to manufacturer instructions (usually it’s 4-5 minutes).
Wash the fresh carrots and pat them dry with paper towels. Trim the ends (most of the very thin part should be cut off as it will simply get charred very quickly and burn), and cut the carrots in half. Mine measured to about 4 inches long and ¾ inch thick strips.

In a larger mixing bowl toss the carrots in honey, oil, rosemary, salt, pepper. Set aside for 15-30 minutes. If in a rush, you can proceed directly to air frying.

Arrange carrots in a single layer in the basket (lightly coat with oil or use basket liners). Air fry for 12-15 minutes, shaking the basket halfway through for even cooking. Optionally, add 2-3 fresh rosemary stalks to the basket for added flavor. You’ll need to do this in 2-3 batches depending on the size of your air fryer basket.
The roasted carrots will be crispy, golden brown and cooked through until softened inside but not very soft compared to baking. Add crumbled feta cheese and fresh rosemary stalks on top when serving. Sweet and salty flavored carrots are best enjoyed as side dish or with dipping sauces.
