Ingredients
- Carrots - you can cut them in thicker circles or carrot fries like I did. While baby carrots are an option, they may char quickly due to their smaller size. For a special occasion, consider using rainbow carrots.
- Oil - start with 1-2 tablespoons, adjusting as necessary.
- Honey - can be substituted with maple syrup.
- Rosemary - or thyme! Reserve 3 stalks of fresh rosemary for the honey marinade and additional rosemary for air frying and garnish.
- Salt - when ready to serve, sprinkle sea salt flakes on top of the carrots.

For Serving
- crumbled feta cheese
- fresh rosemary stalks
- and more honey!
Tips
- Baby carrots can be used, but they'll cook faster, reducing the cooking time by about 5-7 minutes.
- Less oil. In my experience, air fryer carrot fries turn out crispier and more flavorful with less oil.
- Most fried foods don't reheat well, including these carrots. For best results, reheat them the same day they were made in a preheated air fryer at 375°F for 3-5 minutes.
- I always preheat my air fryer, much like you would with an oven. Skipping preheating will require additional cooking time.
Freezing And Storing Instructions
- Store the carrots in an airtight container in the fridge for 1-2 days max.
- Reheat in the air fryer at the same temperature - 375 degrees Fahrenheit or in the oven at 425 degrees Fahrenheit. Don’t add any more oil.
- Make ahead. Save time by cutting your carrots up to 2 days ahead of air frying. Store them in an airtight container in the refrigerator.

INGREDIENTS
- 1 pound regular carrots
- 1 tablespoons of olive oil
- 4 tablespoons honey, liquid type
- ½ cup crumbled feta cheese, (to sprinkle on top)
- 3 stalks fresh rosemary, for marinade + more for air frying and garnish
- 1 teaspoon crushed sea salt flakes
- Black Pepper to taste
INSTRUCTIONS
- Preheat your air fryer (or Ninja Foodi) to 375 degrees Fahrenheit according to manufacturer instructions (usually it’s 4-5 minutes).
- Wash the fresh carrots and pat them dry with paper towels. Trim the ends (most of the very thin part should be cut off as it will simply get charred very quickly and burn), and cut the carrots in half. Mine measured to about 4 inches long and ¾ inch thick strips.1 pound regular carrots
- In a larger mixing bowl toss the carrots in honey, oil, rosemary, salt, pepper. Set aside for 15-30 minutes. If in a rush, you can proceed directly to air frying.1 tablespoons of olive oil, 4 tablespoons honey, 3 stalks fresh rosemary, 1 teaspoon crushed sea salt flakes, Black Pepper to taste
- Arrange carrots in a single layer in the basket (lightly coat with oil or use basket liners). Air fry for 12-15 minutes, shaking the basket halfway through for even cooking. Optionally, add 2-3 fresh rosemary stalks to the basket for added flavor. You’ll need to do this in 2-3 batches depending on the size of your air fryer basket.
- The roasted carrots will be crispy, golden brown and cooked through until softened inside but not very soft compared to baking. Add crumbled feta cheese and fresh rosemary stalks on top when serving. Sweet and salty flavored carrots are best enjoyed as side dish or with dipping sauces.½ cup crumbled feta cheese
NOTES
- The carrots should be fork-tender and crispy on the outside. If you overcook the carrots they can become mushy in texture.
- Oven Instructions. Follow the steps until air frying, Place carrots in oven and bake at 425 F (220C) for 15 minutes, toss, then roast further for 5-10 minutes until soft and caramelized with some glaze left on the tray. Toss them in glaze and serve.
- nutrition is calculated together with feta cheese.

- Prep. Preheat your air fryer (or Ninja Foodi) to 375 degrees Fahrenheit according to manufacturer instructions (usually 4-5 minutes).
- Carrots. Wash the fresh carrots and pat them dry with paper towels. Trim the ends (most of the very thin part should be cut off as it will simply get charred very quickly and burn), and cut the carrots in half. Mine measured approximately 4 inches in length and ¾ inch in thickness when cut into strips.
- Toss the carrots in honey, oil, rosemary, salt, and pepper. Set aside for 15-30 minutes.
- Spray the basket lightly with a little oil and arrange carrots in single layer.
- Air fry for 12-15 minutes, shaking the basket halfway through a couple of times to ensure even frying. I like to add 2-3 fresh rosemary stalks into the air fryer basket. You’ll need to do this in 2-3 batches depending on the size of your air fryer basket.
It took me 2 batches with Cosori 5.8 quart although this may differ depending on the type of air fryer used such as a Philips air fryer or a 6-quart air fryer.
