INGREDIENTS
  

For Egg Tacos

  • 6 eggs, beaten
  • olive oil for cooking
  • salt and black pepper to taste
  • ¼ cup green onion, diced
  • 6 taco size tortillas, corn or wheat
  • 1 medium avocado, sliced
  • ½ cup feta cheese, crumbled
  • lime wedges, for serving
  • cilantro , for garnish

Tomato Salsa

  • 1 tablespoon jalapeno, or more, diced
  • ¼ cup red onion, diced
  • 1 tablespoon cilantro, chopped
  • 1 cup tomato, diced
  • half of a lime juice
  • salt and black pepper to taste
  • ¼ cup bell pepper, diced

INSTRUCTIONS
 

  • Make the tomato salsa by mixing all the ingredients together. In a bowl, beat the eggs and season with salt and pepper.
    1 tablespoon jalapeno, ¼ cup red onion, 1 tablespoon cilantro, 1 cup tomato, half of a lime juice, ¼ cup bell pepper, salt and black pepper to taste
  • Heat some cooking oil in a skillet over medium-high heat and scramble the eggs to your liking. Set them aside.

  • Warm the tortillas in a dry skillet until they get a light char. Assemble the tacos by placing the scrambled eggs on top of the tortilla, followed by the tomato salsa. Top with feta cheese, avocado slices, cilantro, green onions, and a squeeze of lime juice just before serving.

Taco Topping Ideas
  • Hot Sauce: Don’t forget to drizzle your favorite hot sauce on top for an extra kick!
  • Meats: Add some cooked chorizo, bacon, ham, or leftover sliced steak for extra flavor.
  • Cheese: Sprinkle on shredded cheese, like medium cheddar or a Mexican cheese blend, for a creamy touch.
  • Salsa: Top with your choice of salsa, such as roasted tomato salsa, homemade salsa, or pico de gallo. Fresh diced tomatoes work great too!
