Ingredients
  

For Egg Tacos
  • 6 eggs beaten
  • olive oil for cooking
  • salt and black pepper to taste
  • ¼ cup green onion diced
  • 6 taco size tortillas corn or wheat
  • 1 medium avocado sliced
  • ½ cup feta cheese crumbled
  • lime wedges for serving
  • cilantro for garnish
Tomato Salsa
  • 1 tablespoon jalapeno or more, diced
  • ¼ cup red onion diced
  • 1 tablespoon cilantro chopped
  • 1 cup tomato diced
  • half of a lime juice
  • salt and black pepper to taste
  • ¼ cup bell pepper diced

Method
 

  1. Make the tomato salsa by mixing all the ingredients together. In a bowl, beat the eggs and season with salt and pepper.
    1 tablespoon jalapeno, ¼ cup red onion, 1 tablespoon cilantro, 1 cup tomato, half of a lime juice, ¼ cup bell pepper, salt and black pepper to taste
  2. Heat some cooking oil in a skillet over medium-high heat and scramble the eggs to your liking. Set them aside.

  3. Warm the tortillas in a dry skillet until they get a light char. Assemble the tacos by placing the scrambled eggs on top of the tortilla, followed by the tomato salsa. Top with feta cheese, avocado slices, cilantro, green onions, and a squeeze of lime juice just before serving.
