INGREDIENTS
For Egg Tacos
6eggs, beaten
olive oil for cooking
salt and black pepper to taste
¼cupgreen onion, diced
6taco size tortillas, corn or wheat
1medium avocado, sliced
½cupfeta cheese, crumbled
lime wedges, for serving
cilantro , for garnish
Tomato Salsa
1tablespoonjalapeno, or more, diced
¼cupred onion, diced
1tablespooncilantro, chopped
1cuptomato, diced
half of a lime juice
salt and black pepper to taste
¼cupbell pepper, diced
INSTRUCTIONS
Make the tomato salsa by mixing all the ingredients together. In a bowl, beat the eggs and season with salt and pepper.
1 tablespoon jalapeno, ¼ cup red onion, 1 tablespoon cilantro, 1 cup tomato, half of a lime juice, ¼ cup bell pepper, salt and black pepper to taste
Heat some cooking oil in a skillet over medium-high heat and scramble the eggs to your liking. Set them aside.

Warm the tortillas in a dry skillet until they get a light char. Assemble the tacos by placing the scrambled eggs on top of the tortilla, followed by the tomato salsa. Top with feta cheese, avocado slices, cilantro, green onions, and a squeeze of lime juice just before serving.
