- Make the tomato salsa by mixing all the ingredients together. In a bowl, beat the eggs and season with salt and pepper.1 tablespoon jalapeno, ¼ cup red onion, 1 tablespoon cilantro, 1 cup tomato, half of a lime juice, ¼ cup bell pepper, salt and black pepper to taste
- Heat some cooking oil in a skillet over medium-high heat and scramble the eggs to your liking. Set them aside.olive oil for cooking, 6 eggs
- Warm the tortillas in a dry skillet until they get a light char. Assemble the tacos by placing the scrambled eggs on top of the tortilla, followed by the tomato salsa. Top with feta cheese, avocado slices, cilantro, green onions, and a squeeze of lime juice just before serving.¼ cup green onion, 6 taco size tortillas, 1 medium avocado, ½ cup feta cheese, lime wedges, cilantro , salt and black pepper to taste
