These egg tacos are quick and easy, delicious, and packed with flavor! Here’s what you’ll need to whip up this tasty breakfast:
Tomato Salsa:
- Jalapeno - Start with 1 tablespoon of diced jalapeño for a spicy kick. Feel free to add more if you like it hotter! Don't like it hot? No problem, I like to add green bell peppers instead, especially when serving these for my son.
- Red onion - Use ¼ cup of diced red onion for a bit of sweetness and crunch.
- Cilantro - A tablespoon of chopped cilantro adds freshness to the salsa.
- Tomatoes - Dice up 1 cup of fresh tomatoes for a juicy base. Cherry or plum tomatoes are excellent too!
- Lime juice - Squeeze the juice of half a lime to brighten up the flavors.
- Bell pepper - Red or green. Peppers add sweetness but you can skip it and use just tomatoes.
For the Tacos:
- Eggs - I used 6 eggs, but you can increase depending on how fulfilling you want your tacos (and for how many people serving).
- Salt and black pepper - Season these tacos well!
