Equipment

Method

  1. In a mason jar, storage container, or bowl, combine the milk, rolled oats, pumpkin puree, protein powder, maple syrup, chia seeds, cinnamon, vanilla, and pumpkin pie spice. Stir well until everything is evenly mixed.
½ cup milk of choice, ½ cup old fashioned rolled oats, ¼ cup pumpkin puree, ¼ cup vanilla protein powder, 2 tablespoons pure maple syrup, 1 teaspoon chia seeds, 1 teaspoon ground cinnamon, ½ teaspoon vanilla extract
  2. Taste the mixture and add more maple syrup if you like. Keep in mind the oats will thicken as they sit in the fridge.
    ¼ cup vanilla protein powder
  3. Cover the jar or container and refrigerate for at least 2 hours, or overnight (8 hours) for the creamiest texture.
  4. When you are ready to eat, give the oats a good stir and top with chopped pecans, dried cranberries, and whipped cream or yogurt, if you like.
½ teaspoon pumpkin pie spice, chopped pecans
  5. Enjoy straight from the fridge.

Notes

  • Pumpkin puree: canned puree works, or use homemade baked pumpkin blended until smooth.
  • Making a larger batch: use 2 tablespoons of chia seeds instead of 1.
  • Protein powder: pumpkin flavored powder works especially well, but vanilla or cinnamon both work. With vanilla or cinnamon, add a little extra pumpkin pie spice for a stronger pumpkin flavor.
  • Oats: old fashioned oats stay thicker and chewier, quick oats give a smoother, creamier texture but lose their bite faster.
  • Storage: keep in an airtight container in the fridge for 4 to 5 days.
