Ingredients
  

  • 3 medium potatoes cut into wedges
  • ¼ cup olive oil
  • ½ cup vegetable broth
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 lemons 1 for juice, 1 for slicing
  • 2 cloves garlic minced
  • Chopped parsley for garnish

Method
 

  1. Preheat the Oven: Set your oven to 400°F (200°C) so it’s hot and ready.
  2. Prepare the Potatoes: Put the potato wedges in a baking dish.

  3. Make the Sauce: In a bowl, mix vegetable broth, juice from 1 lemon, olive oil, oregano, salt, and pepper.

  4. Add the Sauce: Pour this mixture over the potato wedges.
  5. Add Garlic and Parsley: Use a garlic press to crush the garlic and spread it over the potatoes. Sprinkle chopped parsley on top.

  6. Add Lemon Slices: Place slices from the second lemon on the potatoes for extra flavor.

  7. Bake: Put the dish in the oven and bake for 45-55 minutes, or until the potatoes are golden and soft.
