These Marinated Cherry Tomatoes are bright and juicy, combining ripe summer tomatoes in a honey vinegar marinade that's infused with fresh herbs and seasoning!

Ingredients
  

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine or apple cider vinegar
  • 1 teaspoon honey
  • 1 tablespoon garlic minced
  • 3 tablespoons chopped parsley or fresh basil
  • 1 tablespoon fresh dill chopped
  • fine salt and black pepper to taste
  • 1 lb cherry tomatoes halved
  • ½ teaspoons red chili flakes optional

Method
 

  1. In a salad bowl, mix together olive oil, garlic, vinegar, honey, parsley, dill, salt, pepper, and chili flakes.
  2. Add the halved tomatoes to the mixture and gently stir to coat them. Taste and adjust the seasoning if needed by adding more salt, garlic, or chili flakes.
  3. Cover the bowl and let it sit in the fridge for 1-2 days. Keep it cold, but serve it at room temperature. Enjoy!
