Ingredients
- Extra virgin olive oil - Use high quality for best results.
- Vinegar - Use red wine or apple cider vinegar to make the Italian dressing base for this marinated tomato salad recipe.
- Honey - Does an excellent job of balancing the sharp tang from the vinegar.
- Garlic - Freshly minced from one clove of garlic.
- Fresh herbs - Use either chopped parsley or basil. Freshly chopped dill is also used in this recipe.
- Seasoning - Use fine salt and black pepper. Red chili flakes are optional.
- Cherry tomatoes - This is the key ingredient for this recipe. Make sure to wash, pat dry, and halve them. Other baby tomatoes like grape tomatoes can also be used. I don't recommend using canned tomatoes, as fresh tomatoes are best.

How To Make Marinated Cherry Tomatoes
- Make the vinaigrette: Combine the olive oil, minced garlic, vinegar, honey, parsley, dill, and seasonings in a salad bowl.
- Add the tomatoes: Add the halved tomatoes and gently stir them to coat them. You can adjust the seasonings at this point if needed.
- Marinate: Cover the salad bowl with plastic wrap and allow the tomatoes to marinate in the oil mixture in the fridge for 1-2 days.
Tips
- Temperature: These marinated cherry tomatoes should be brought to room temperature before serving, but they must be kept and stored chilled in the refrigerator to preserve freshness.
- Marinade time: The tomatoes need to marinate for 1-2 days in the fridge. Make sure that you factor this time in when preparing these tomatoes for specific social gatherings or weekly meal preparations. If you're in a rush for time, allow the tomatoes to marinate for at least 2 hours.
- Quality ingredients: This recipe only calls for a few ingredients. As such, it's essential that you select only the best high-quality ingredients to ensure the most flavor.
- Ripe tomatoes: Only use ripe tomatoes for this recipe. The tomatoes should be bright red, still slightly firm without being overly hard, and free from blemishes and dark spots.

Freezing And Storing Instructions
Store these marinated cherry tomatoes in an airtight container in the refrigerator for up to 4-5 days. I don't recommend freezing these marinated cherry tomatoes as they can turn overly mushy once thawed.
Allow the tomatoes to sit at room temperature before serving again as a tasty appetizer or side dish.

I recommend marinating your cherry tomatoes for 1-2 days. If you are in a rush, marinate the tomatoes for a minimum of 2 hours.
Whole cherry tomatoes can be kept in a bowl on your counter at room temperature. They should be moved to the fridge if they are very ripe or if you live in warm and humid conditions.
The best way to preserve cherry tomatoes is in sealed mason jars in a pickling mixture, much like the vinaigrette I've made for these marinated cherry tomatoes. Stored correctly, you can preserve your pickled tomatoes for up to 2 months. Once opened, they should be kept in the fridge but can be served at room temperature.
