Perfect Garlic Parmesan Asparagus (With Tomatoes)

Ingredients
  

  • 1 pound asparagus
  • 7 ounce cherry tomatoes cut in half
  • cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons panko breadcrumbs I used Kikoman (gluten free)
  • 4 tablespoons parmesan grated
  • 2 garlic cloves pressed

Method
 

  1. Preheat the Oven: Turn on your oven to 425°F (220°C).
  2. Prepare the Seasoning: Mix together olive oil, garlic, paprika, salt and pepper, 2 tablespoons of parmesan cheese, and panko breadcrumbs on a baking sheet.
    ⅓ cup olive oil, 1 teaspoon smoked paprika, ½ teaspoon black pepper, 3 tablespoons panko breadcrumbs, 4 tablespoons parmesan, 2 garlic cloves, 1 teaspoon salt
  3. Coat the Asparagus: Place the asparagus on the baking tray using thongs. Toss the asparagus with the seasonings mixture until fully coated (just use your hands!). Add tomatoes.

  4. Add More Cheese: Sprinkle the remaining 2 tablespoons of parmesan cheese on top.
  5. Spray with Olive Oil: Give the asparagus a light spray of olive oil. It helps it cook just right!
  6. Bake It: Air fry until the asparagus is crisp-tender and starting to brown in spots. Cook time will depend on your oven and thickness of asparagus. Roasting asparagus with tomatoes will take about 20-25 minutes. When it's done, it will have browned and the asparagus will be tender and delicious!
