Every fall I mean to make more of my own drinks and every fall I default to buying the syrup. So this is my fix. A short list of cozy fall drinks I can actually pull off, sorted into warm mugs, pumpkin coffee, cider cocktails, and mocktails.

Most of these scale up for a party and hold in a slow cooker, which is the whole point. Set one out and let people serve themselves while you deal with the food.
None of them need a bar cart or a fancy machine.

How to Build a Fall Drink Menu for a Party
- Offer one warm and one cold. A slow cooker of mulled cider plus a cold pitcher covers every guest and every temperature preference.
- Make a spiced simple syrup ahead. Cinnamon and ginger simmered with sugar and water keeps for two weeks and turns any drink into a fall drink.
- Always have a good mocktail. Not everyone drinks. A pumpkin or cider mocktail should be as thought out as the cocktail, not an afterthought.
- Batch, do not bartend. Infuse the bottle or build the pitcher before guests arrive so you are not making drinks one at a time.
- Keep garnishes simple. Apple slices, cinnamon sticks, and orange peel do all the work. Skip anything you have to fuss with.
- Do not let anything boil. Mulled wine and warmed milk both turn on you at a boil. Low and slow keeps them smooth.
Fall Drink Questions
What is the best homemade pumpkin spice latte?
Look for one made with real pumpkin puree, not just syrup, warmed gently so the pumpkin does not turn grainy. Real pumpkin, warm milk, maple syrup, and pumpkin pie spice is the base almost every good recipe uses.
Can I make fall drinks non alcoholic?
Yes. Mulled cider, spiced apple cider, chai, and hot chocolate are alcohol free to start. For cider cocktails, swap the bourbon for extra cider or a splash of ginger beer and add a spiced simple syrup for depth.
How do I keep a big batch of warm cider or mulled wine hot for a party?
Use a slow cooker on the warm or low setting. Do not leave it on high, which will slowly cook off the alcohol and dull the spices. Give it a stir every so often.
What spices should I keep on hand for fall drinks?
Cinnamon sticks, whole cloves, star anise, fresh ginger, cardamom pods, and pumpkin pie spice. Whole spices are better for anything you simmer, ground spice for anything you whisk.
