For cooking, the easiest heavy cream substitute is ¾ cup whole milk whisked with ¼ cup melted butter to replace one cup of cream. Half and half, evaporated milk, and full-fat coconut milk also work in sauces and soups.

None of these whip - for whipped cream you need actual cream with at least 36 percent fat.

How to Use Each Substitute
- For pasta sauce and gravy - milk plus butter, or half and half. Add a spoon of flour or simmer to thicken since these are thinner than cream.
- For soup - evaporated milk or coconut milk hold up to heat well. Add at the end.
- For baking - milk plus butter for most things; evaporated milk for custards and pumpkin pie.
- Dairy-free - coconut milk for curries and soups, cashew cream for anything savory and neutral, oat-based "cream" alternatives one for one.
- What will not work - low-fat milk alone (too thin, curdles when reduced), plain yogurt added to a boiling pot.
Heavy Cream Substitute FAQs
Can I use milk instead of heavy cream?
Yes for cooking, if you add butter (¾ cup milk + ¼ cup butter per cup of cream). Straight milk is too thin and can curdle when boiled.
Can you substitute half and half for heavy cream?
Yes in soups and sauces. It will not whip and can break under long reduction, so lower the heat.
What is a dairy-free substitute for heavy cream?
Full-fat coconut milk for curries and soups, or blended cashew cream for neutral savory dishes.
Does any cream substitute whip?
No. Whipping needs 36 percent-plus milkfat, which only heavy or whipping cream has. Chilled coconut cream is the closest dairy-free option.
