DIY Gluten Free Flour
If you are struggling to find a good gluten-free all-purpose flour replacement, you definitely need to try this blend.
There are many options available, both homemade and store-bought, but this one is what I've chosen so far as my go-to gluten-free flour blend.
This flour is perfect for cookies, pancakes, crepes, and simple cakes. It comes together in 5 minutes, and you can use it more than once. So simple!

A quick note here about Xanthan gum. Xanthan gum is widely used in gluten-free baking; it helps hold things together and provides elasticity to gluten-free baked goods.
It is also essential to measure it out correctly for your blends, as a little bit less or more of it will result in different recipes.

Ingredients
- 4 cup white rice flour (gluten free)
- ⅔ cup millet flour
- ¾ cup cornstarch
- 2 tablespoon xanthan gum

Tips
- Mix together various gluten-free flours in a large mixing bowl and store them in an airtight container in a dry spot (I usually opt for a large mason jar).
- Gluten-free flours can be tricky since they behave differently in almost every recipe. Thus, use this blend instead of all-purpose or whole wheat flour.
- This blend has proven successful in muffins, pancakes, breading, fritters, cakes, quick breads, cornbread, waffles, gluten-free crepes, and more.
- PS. Substituting gluten-free flour for all-purpose flour in a 1:1 ratio might not always give the best results. To enhance texture, consider mixing in other ingredients like almond meal, almond flour, oat flour, and/or rolled oats along with the gluten-free blend.
