My Best Tips for Ground Beef Skillet Dinners
The method barely changes from recipe to recipe, so nail these and every skillet dinner gets better.
- Brown the beef in a wide, hot pan and do not crowd it. If the pan is packed, the beef steams grey instead of browning. Give it room, let it sit undisturbed for a minute, then break it up. Real color means real flavor.
- Salt the beef while it cooks, not after. Seasoning as it browns gets the salt into the meat instead of just on the surface. It makes a bigger difference than you would expect.
- Build a fond and deglaze it. Those brown bits stuck to the pan after browning are flavor gold. When you add broth, tomatoes, or sauce, scrape them up so they melt into the dish.
- Add pasta straight to the skillet when you can. Cooking the noodles right in the sauce means one less pot and a starchier, silkier sauce. Just add a little extra liquid and stir now and then.
- Stir dairy in off the heat. Sour cream, cream cheese, or a big handful of shredded cheese can break or go grainy if the pan is boiling. Pull it off the burner first, then stir.
- Swap in ground turkey one for one. It works in every recipe here. Just add a splash of oil since turkey is leaner, and season a touch more aggressively.

How do I keep ground beef from being greasy?
Use 90 percent lean, or drain the fat after browning and leave about a tablespoon behind for flavor. Tilting the pan and spooning the grease out works fine.
Can I make skillet dinners ahead of time?
Yes. Most keep three to four days in the fridge and freeze well for a couple of months. Add a splash of broth or water when you reheat since the starch soaks up liquid.
What is the best pan for skillet dinners?
A 12-inch stainless steel or cast iron skillet with a lid, or a deep saute pan. You want something wide enough to brown the beef without steaming it and deep enough to hold a full dinner.
Can I use pre-cooked or frozen ground beef?
Yes. Thaw frozen beef fully first and pat it dry so it browns instead of steams. Already-cooked beef works too, just add it with the sauce so it does not overcook.
