While they cook, soy sauce, honey, garlic, and ginger simmer down into a syrupy glaze with a small spoon of gochujang for warmth. Toss the hot wings straight in and they stay crackly under the sauce instead of going soft.
This makes a good sized batch for a weeknight dinner or a smaller appetizer portion for a game day spread. Either way, they do not last long.
Ingredients
- Chicken wings - 2 pounds, party wings already separated into flats and drumettes if you can find them.
- Salt, pepper, garlic powder, smoked paprika - a simple dry seasoning that flavors the wings before the glaze ever touches them.
- Soy sauce and honey - the base of the glaze, salty and sweet in roughly equal parts.
- Fresh ginger and garlic - a generous amount of both. This is where the honey GARLIC wings earn their name.
- Butter - stirred into the glaze for shine and body.
- Gochujang paste - optional, just a teaspoon for background heat. Leave it out for a fully mild wing, or use red pepper flakes instead.
- Rice vinegar and sesame oil - stirred in at the end so the glaze stays bright instead of tasting flat.
- Sesame seeds and green onions - for garnish and crunch.

Julia's Tip
Give the wings room in the basket. If they are stacked or touching, the parts that touch will steam instead of crisp, and you will end up with soft, pale patches. Cook in two batches if you need to, it is worth the extra few minutes.

- Toss the chicken wings with the salt, pepper, garlic powder, and smoked paprika until evenly coated.
- Arrange the wings in a single layer in the air fryer basket without crowding them. Spray lightly with cooking oil and air fry at 400 degrees Fahrenheit for 10 minutes. Flip and cook 8 to 10 minutes more, until deeply golden and crisp.
- While the wings cook, combine the soy sauce, honey, ginger, garlic, butter, and gochujang, if using, in a small saucepan.
- Bring to a gentle boil, then lower the heat and simmer for 6 to 8 minutes, until thick enough to coat the back of a spoon. Off the heat, stir in the rice vinegar and sesame oil.
- Toss the hot wings in the glaze and top with sesame seeds and green onions. Serve right away.

- Toss while everything is hot. Warm wings and warm glaze grip each other. Cooled wings just get sticky, not coated.
- Taste the glaze before adding more gochujang. It gets spicier the longer it simmers.
Variations
- Make it fully mild. Leave out the gochujang and red pepper flakes entirely for a kid friendly honey garlic wing.
- Make it spicier. Double the gochujang or finish with a drizzle of chili crisp.
- Bake instead of air fry. Roast at 425 degrees Fahrenheit on a wire rack for about 40 minutes, flipping halfway.
- Swap the protein. The same glaze works well on chicken thighs or drumsticks, just adjust the cook time.
- Go gluten free. Use tamari in place of soy sauce and check your gochujang brand.
Can I Make These In The Oven Instead?
Yes. Roast the seasoned wings on a wire rack set over a baking sheet at 425 degrees Fahrenheit for about 40 minutes, flipping halfway, until deeply golden and crisp. The rack keeps air moving underneath so the skin crisps instead of steaming in its own fat.

How Spicy Are These Wings?
Mild to medium. A single teaspoon of gochujang in the whole batch of glaze gives warmth in the background, not a punch of heat. Leave it out for a fully sweet and savory wing, or double it if you want more kick.

- To Store. Keep leftovers in an airtight container in the fridge for up to 3 days.
- To Reheat. Warm in the air fryer at 375 degrees Fahrenheit for 5 to 7 minutes to bring back the crisp. The microwave works but softens the skin.
- To Freeze. Freeze the cooked, unsauced wings for up to 2 months. Reheat from frozen in the air fryer, then toss in a freshly made batch of glaze.
