This Quick Apricot Dessert takes just 10 minutes to prep and about 15 minutes to bake. It’s sweet, warm, and so easy—perfect for summer nights or last-minute guests. I love how it looks fancy, but even beginners can make it without stress.

Ingredients

  • Apricots – Use ripe but still firm apricots. If they’re too soft, they’ll get mushy in the oven. You can also use fresh peaches or nectarins.
  • Butter – Adds richness and helps caramelize the fruit. I save a little for greasing the pan too.
  • Coconut sugar or brown sugar – Either works! I like the light caramel taste of coconut sugar.
  • Cinnamon and cardamom – These two spices make a big flavor impact. Just a pinch of cardamom goes a long way.
  • Salt – A small pinch of kosher salt balances the sweetness.
  • Graham crackers – Crushed on top for a little crunchy crumble. You only need a bit.
  • Toasted almond flakes – I love the nutty crunch. Toast them ahead of time or buy them pre-toasted.
  • Vanilla yogurt or vanilla ice cream (optional) – For serving, if you want something creamy on the side.

How To Bake Apricots

  1. Prep the apricots: Wash and slice them in half. Remove the pits.
  2. Preheat the oven: Set it to 400°F (200°C). Grease your baking dish with a little butter.
  3. Arrange the fruit: Place apricots cut side up in the dish.
  4. Add the spice mix: In a small bowl, mix coconut sugar, cinnamon, cardamom, and salt. Sprinkle it evenly over the apricots.
  5. Add butter: Top each apricot half with a tiny piece of butter.
  6. Bake: Place in the oven for 15–17 minutes. The apricots should soften and get lightly golden around the edges.
  7. Top and serve: Remove from the oven, sprinkle with crushed graham crackers and almonds, and serve warm. Add a scoop of vanilla yogurt or ice cream if you'd like!

Tips

  • Use firm-ripe apricots – Too soft and they’ll collapse in the oven.
  • Don’t skip the butter – It helps the apricots caramelize and adds richness.
  • Make it nut-free – Skip the almonds or use sunflower seeds if needed.
  • Try a different fruit – Peaches, plums, or nectarines also work beautifully.
  • Add citrus zest – A little orange or lemon zest can brighten the whole dish.
  • Swap the spices – No cardamom? Just use extra cinnamon or a dash of nutmeg.
  • Make it crispier – Add more graham cracker or toss in some granola for extra crunch.
  • Add oats – Mix a tablespoon of oats with the graham cracker for a crumble topping.
  • Try maple syrup – Drizzle a bit over the top after baking for a boost of sweetness.
  • Add vanilla – A drop of vanilla extract in the sugar mix gives it that bakery flavor.

What To Serve With Quick Apricot Dessert

I love serving this dessert with something creamy to balance the warm fruit:

  • Chilled custard – Old-school and comforting.
  • Vanilla yogurt – Adds a cool, tangy contrast.
  • Vanilla ice cream – Classic and indulgent.
  • Whipped cream – A dollop makes it extra dreamy.
  • Mascarpone or ricotta – For a creamy, not-too-sweet finish.

Freezing And Storing Instructions

  • To Store. Keep leftovers in an airtight container in the fridge for up to 3 days.
  • To Freeze. Not recommended—apricots get watery when frozen and thawed.
  • To Make Ahead. You can prep and spice the apricots in the dish, then cover and refrigerate up to 4 hours before baking.
  • To Reheat. Warm in a 300°F oven for 8–10 minutes or microwave for 30 seconds.

  • ¼ teaspoon cinnamon
  • 1 pinch of cardamom ground

  • 1-2 tablespoon graham crackers, crushed
  • 2 tablespoon toasted almond flakes
  • Vanilla yogurt or vanilla ice cream for serving, optional
