These crispy puff pastry waffles come together in just 15 minutes with 1 sheet of dough and a waffle maker—no oven needed! Whether you top them with creamy cheese and jam or go savory with ham and sour cream, they’re flaky, fun, and perfect for busy mornings.

Ingredients
- Puff pastry – I use store-bought frozen puff pastry. Just let it thaw before cutting. Don’t roll it out—this keeps the layers super fluffy.
- Creamy cheese – Something spreadable like Philadelphia is perfect. It melts slightly from the warmth of the waffles.
- Almond flakes – Lightly toasted in a dry pan. Adds crunch and nuttiness.
- Jam – I love raspberry or apricot, but any favorite will work. Even lemon curd!
- Avocado or olive oil – Just a little for brushing the waffle maker so nothing sticks.

How To Make Crispy Waffles
- Prep the pastry: Place thawed puff pastry on a floured surface. Cut into squares (I do about 2½ x 2½ inches, but you can go larger).
- Heat the waffle maker: Brush with avocado or olive oil to prevent sticking.
- Cook the waffles: Add squares to the waffle maker and close the lid. Depending on the size of your iron, you can fit 4–6 at a time. Cook until puffed and golden, about 4–5 minutes.
- Serve: Add a generous layer of creamy cheese, sprinkle with almonds, and spoon over jam. Or go savory with ham, cheese, or sour cream.
Tips
- Don’t roll out the dough – This keeps the layers thick and flaky once cooked.
- Cut uniform squares – So they cook evenly. Use a pizza cutter or sharp knife.
- Toast almonds in advance – I do mine in a dry pan for 2–3 minutes. Store extras for salad toppings too.
- Don’t overload the waffle maker – Let them puff up without crowding.
- Waffle makers vary – Some get hotter than others. Start with a test waffle!
- Make ahead friendly – You can cut the pastry squares in advance and chill until ready to cook.
- Try different cheeses – Goat cheese or ricotta would be lovely too.
- Add fresh fruit – Sliced strawberries, blueberries, or peaches on top are amazing.
- Savory version ideas – Ham and cheese, pesto and tomato, or even scrambled egg.
- Make it a dessert – Top with Nutella, ice cream, or powdered sugar.

Freezing And Storing Instructions
- To Store. Keep leftover waffles in an airtight container at room temperature for 1 day, or refrigerate for up to 3 days.
- To Freeze. Freeze cooked waffles between parchment in a zip bag for up to 1 month.
- To Make Ahead. Cut the pastry and store in the fridge until ready to cook.
- To Reheat. Toast in the oven or toaster oven at 350°F for 5 minutes until crispy again.
