5 Tips On How to Cook Ground Chicken Without Drying It Out

Ground chicken can be tricky to get just right. Just like ground turkey, one minute it’s juicy, the next it’s dry and crumbly. I’ve been there, and I’m guessing you have too. Once I learned a few simple tricks, everything changed.

If you love using ground chicken for lighter dinners (like tacos, meatballs, or lettuce wraps), you’ll want to keep reading. Here are 5 game-changing tips to keep it tender and delicious—every single time.

Don’t Overcook It (Seriously)

This one’s a biggie. Ground chicken is lean, about 7% fat compared to 20% in regular ground beef. That means less margin for error.

Cook it just until it’s no longer pink and reaches 165°F internally. No need to “brown” it like beef. Overcooking is the #1 reason it ends up dry.

Pro Tip: Turn off the heat before it looks completely done. The residual heat will finish the job.

  • Add 1–2 teaspoons of olive oil to the skillet before cooking
  • Or, stir in a splash of broth toward the end if it’s looking dry

This keeps everything moist without adding heavy ingredients—perfect for healthy weeknight meals.

Season It Early and Often

Ground chicken has a mild flavor, so it needs some love. I always mix in spices, herbs, or garlic while cooking, not just at the end!

Try this combo:

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt + black pepper
  • Optional: a dash of soy sauce or lemon juice for extra depth

Bonus: Seasoning helps keep moisture locked in.

Don’t Break It Up Too Much

It’s tempting to stir it constantly, but resist the urge! Overworking it makes it rubbery. Instead:

  • Break it into small chunks and let it cook undisturbed for a minute

Ground chicken works best in moist dishes, think stir-fries, wraps, chili, or meatballs. Mixing in chopped onion, zucchini, or even spinach helps it stay moist.
