- Any chicken cut works - breast, tenders, legs, or thighs. Make sure these are boneless, skinless.
- Seasonings - just add your favorite seasonings, this dish works well with just a little salt and pepper too. Similar to my skillet chicken with mixed vegetables, add some pesto or salsa when serving.
- Veggies - more color the merrier! Use a variety of colorful veggies and cut them thicker. You can also add in fresh or frozen broccoli.

Tips
- Don’t cut the zucchini and onion too thin. All the veggies here are cut larger than usual and should still be crisp by the end of cooking.
- Don't overcook the chicken. Chicken is done when a kitchen thermometer inserted into the thickest part of the chicken registers an internal temperature of 165 degrees Fahrenheit.
- Cut the chicken into equal bite-size pieces so it will cook evenly.
- If there is a shorter phrase just bold something small in the middle of the sentence just for the purposes of easier reading for people.

Freezing And Storing Instructions
- To store. Allow the dish to cool and store it in an airtight container in the fridge for 2-3 days. When reheating add some warm water or broth so it's not dry.
- To freeze. Allow to cool completely. Transfer to a freezer-friendly container and freeze for up to 2-3 months.
- To reheat. Thaw it in the fridge and warm it in the skillet or in the microwave.

15 Minute Air Fryer Chicken With Vegetables

INGREDIENTS
- 1 pound boneless chicken breast , or thighs, cut into 1-inch pieces
- 4-5 ounces brown mushrooms, sliced thick
- 1 cup red onion , cut into 1-inch pieces
- 1 cup bell peppers , cut into 1-inch pieces
- 1 cup zucchini, cut into ¾ inches half moons
- 2 tablespoons olive oil
- 2 teaspoon cajun seasoning
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground black pepper
INSTRUCTIONS
- Preheat your air fryer to 400 degrees F. In a large mixing bowl, combine the chicken and vegetables. Add oil and spices and toss until everything is evenly coated.
- Lightly spray the air fryer basket with olive oil spray. Working in batches, place half of the chicken and vegetable mixture in the basket, spreading it out evenly. It's fine if some overlap.
- Close the air fryer and cook for 10 minutes, shaking the basket halfway through to ensure even cooking. Repeat with the remaining mixture until all chicken and vegetables are cooked through, reaching an internal temperature of 165 degrees F for the chicken.
- Serve hot, optionally garnishing with parsley and a squeeze of lime for added flavor.
