This is my fun twist on classic blinis, but no flour or eggs needed! I love making these during weekend when there's more time for breakfast prep. You may think it's fancy, but it's really simple: crispy smashed baby potatoes topped with creamy yogurt sauce, fresh cucumber, and smoked salmon. Yum!

Ingredients
- Baby potatoes - I like to use waxy varieties like Baby Yukon Gold, Baby Dutch Yellow, Charlotte, or Baby Red Bliss. These hold their shape well after boiling and smash nicely without falling apart. Avoid floury varieties like Russet, they’re too starchy and tend to crumble when smashed.
- Salmon - Smoked salmon adds that classic flavor, but lightly salted works great too.
- Cucumber - Thinly sliced for a fresh, cool crunch. Substitute with green onions or fresh herbs.
- Greek yogurt - The base for a creamy, tangy sauce. Full-fat works best for richness (I like Wholefoods plain Greek Yogurt). Sour cream is your next option!

How To Make Crispy Potato Salmon Blinis
- Boil the potatoes in salted water until fully cooked and tender. Let them cool completely.
- Place a 3-inch round mold on parchment paper. Add 3-4 boiled potatoes inside the mold. Use the bottom of a glass or mug to gently mash them into a patty shape.
- Repeat until all the potatoes are formed into patties.
- Carefully transfer the parchment with the patties to your air fryer basket. Lightly spray with avocado oil and season with salt and pepper.
- Air fry at 375°F for 12-14 minutes, or until golden and crispy. Repeat in batches if needed.
- In a small bowl, whisk together all sauce ingredients until smooth.
- To serve, spread a spoonful of sauce on each crispy potato patty, top with 2-3 cucumber slices, a slice of salmon, and garnish with parsley.
Tips
- Cool the potatoes fully before smashing - This helps them hold together better when forming the patties.
- Uniform size matters - Try to pick potatoes that are roughly the same size so they cook evenly.
- Adjust seasoning - Taste your sauce and adjust lemon, salt, or mustard to your liking.
- Use smoked trout or gravlax - These work great if you want to switch up the salmon.
- Serve warm or room temperature - Both work depending on your event.
Freezing And Storing Instructions
- To Store. Store any leftover components separately in airtight containers for up to 2 days.
- To Freeze. The cooked potato patties (without toppings) can be frozen for up to 1 month. Thaw and reheat before assembling.
- To Reheat. Warm the crispy potatoes in the air fryer at 350°F for 5-7 minutes.

INGREDIENTS
For Potatoes
- 2 pounds baby potatoes
- 4-5 ounces salted or smoked salmon, about 12 slices
- 1 small cucumber, thinly sliced
- 2-3 tablespoons fresh parsley, chopped
- salt, pepper to taste
- avocado oil, or olive oil spray
For The Sauce:
- 1 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- salt, pepper to taste (or to preference)
- 1 teaspoon whole grain mustard
INSTRUCTIONS
- Boil the potatoes until fully cooked. Let them cool.2 pounds baby potatoes
- Place a round shape (3 inches in diameter) on a parchment paper that you’ll later transfer to air fryer.
- Place 3-4 potatoes into the round shape. Mash the potatoes with bottom of a glass or mug. Gently press down on each potato to flatten it into a round patty shap.
- Repeat with 3 more. Transfer to air fryer. Season with salt pepper, spray lightly with oil.
- Cook in the air fryer at 375°F for 12–14 minutes or until golden and crispy. Repeat if needed.
- For the sauce: in a small bowl, mix all sauce ingredients until smooth.salt, 1 cup Greek yogurt, 1 tablespoon lemon juice, 1 teaspoon whole grain mustard, 1 tablespoon olive oil
- To serve, place a bit of sauce on the potato patty, top with 2-3 cucumber slices, then add a slice of salmon and garnish with parsley.4-5 ounces salted or smoked salmon, 1 small cucumber, 2-3 tablespoons fresh parsley
