Why It's Yummy

- Lightly honey-flavored cornbread taste is to die for! For a more savory option simply omit the honey or add less to the batter.
- Lasts long, especially if wrapped in plastic wrap or an airtight container and placed in the fridge. When ready, either thaw to room temperature or quickly reheat in the oven.

Instructions
Whisk together sugar, baking powder, cornflour, flour, and salt. Set aside.
In a separate bowl, beat the eggs and add the oil, melted butter, honey, and milk. Pour the wet ingredients into dry ingredients. Whisk to combine.
Pour everything into a greased 8 or 9-inch round pan.
- Bake in the oven for 35 minutes at 350º F.
- Serve with butter and maple syrup or use as a side to chilis, stews, soups. Our favorite is this simple bean stew!
Tips
- This recipe also makes tasty gluten-free cornbread muffins. If you’re up for it, simply divide the batter equally into a greased 12 cup muffin tin, bake for 15 minutes, then enjoy!
- Don't overbake it. Like with most baking, I recommend keeping an eye on the cornbread toward the last 10 minutes. If a toothpick inserted into the center comes out with a few breadcrumbs it is ready. This cornbread is soft and moist inside so the center should be still moist when baked.
- Serve this soup in Crack Chicken Noodle Soup or pasta dishes.
FAQs
Cornflour, in fact, is gluten-free. It is a yellow flour made from maize, (i.e. corn). Just like with any flour, it's important to look for labeled gluten-free cornflour whenever possible, due to cross-contamination risks.
Usually, cornbread is savory but depending on what you are serving it with you may add or remove honey/sugar in the recipe and just drizzle sweet syrup of choice on top when serving if needed.
