How To Make Gluten Free Cornbread

Whisk together sugar, baking powder, cornflour, flour, and salt. Set aside.

In a separate bowl, beat the eggs and add the oil, melted butter, honey, and milk. Pour the wet ingredients into dry ingredients. Whisk to combine. 

Pour everything into a greased 8 or 9-inch round pan.

  • Bake in the oven for 35 minutes at 350º F.
  • Serve with butter and maple syrup or use as a side to chilis, stews, casseroles, soups. Our favorite is this simple bean stew!

Tips

  • This recipe also makes tasty gluten-free cornbread muffins. If you’re up for it, simply divide the batter equally into a greased 12 cup muffin tin, bake for 15 minutes, then enjoy!
  • Don't overbake it. Like with most baking, I recommend keeping an eye on the cornbread toward the last 10 minutes. If a toothpick inserted into the center comes out with a few breadcrumbs it is ready. This cornbread is soft and moist inside so the center should be still moist when baked.
  • Serve this soup in Crack Chicken Noodle Soup or pasta dishes.

INGREDIENTS
  

  • 1 ½ cup cornflour
  • ½ cups flour , gluten free flour for baking, if desired
  • ⅔ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ⅓ cup oil
