Garlic Herb Croutons (with Ciabatta!)

Making your own croutons at home is one of those little kitchen tricks that makes everything taste better. These Garlic Herb Croutons are quick, easy, and way tastier than the bagged kind.

I love tossing them on salads, soups, or honestly just snacking on them straight from the pan.

Ingredients

  • Bread – Day-old baguette, ciabatta, or Italian bread works best. The firmer texture holds up in the oven and gives you that crunchy bite.
  • Olive oil – Gives the croutons a rich flavor. Avocado oil or melted butter can work too if that’s what you have.
  • Garlic powder – Adds a savory kick. Fresh garlic burns too fast, so the powder is perfect here.
  • Dried herbs – I like parsley and oregano, but Italian seasoning or even thyme also tastes great.
  • Salt and pepper – Don’t skip them, they balance the flavors.

How To Make Homemade Croutons

  1. Preheat the oven: Set it to 375°F and line a large baking sheet with parchment paper.
  2. Season the bread: Toss bread cubes in olive oil, garlic powder, herbs, salt, and pepper until evenly coated.
  3. Bake: Spread in a single layer on the sheet pan and bake for 12–18 minutes, stirring halfway, until golden and crunchy.

Crowding the pan makes them steam instead of crisp!

Tips

  • Day-old bread works best since it’s sturdier and crisps up better.
  • Keep the cubes similar in size so they bake evenly.
  • Stir them halfway through baking so all sides get golden.

  • A pinch of chili flakes gives a little heat if you like spicy.
  • Use melted butter for a richer flavor, but olive oil keeps it lighter.
  • Bake closer to 18 minutes if you want them extra crunchy. Just keep in mind that they will crisp up even more after cooling.
  • These make the perfect topping for Caesar salad, creamy tomato soup, or even mac and cheese.
