12 Savory Pumpkin Dinners (Not Dessert)

Pumpkin does not have to end up in a pie. That same can of plain puree makes the creamiest pasta sauce, a cozy curry, and a pot of chili that tastes like fall in a bowl. No sugar, no pumpkin spice, just dinner that happens to be orange.

Here are the savory pumpkin dinners my family actually asks for, grouped by type so you can grab a can and start cooking. One 15-ounce can of pumpkin puree (not pie filling, which is already sweetened) is enough to sauce a pound of pasta or thicken a big pot of soup for four. I keep two or three cans in the pantry from October on and pretend I meant to.

Pumpkin Soups

If you have never had savory pumpkin, start here. A blended pumpkin soup is basically impossible to mess up, it freezes like a dream, and it turns one can into dinner plus tomorrow's lunch.

Pumpkin Curry and Chili

This is where pumpkin really earns its spot at dinner. It melts into the sauce, adds body without any dairy, and takes the edge off anything spicy. Serve over rice and nobody guesses there is a vegetable doing all the work.

Pumpkin Pasta and Risotto

Pumpkin plus pasta is the fastest way to a fancy-tasting dinner on a Tuesday. Stir the puree into a little cream or pasta water, add sage and parmesan, and you have a restaurant sauce in the time it takes the noodles to cook.

My Best Tips for Cooking With Canned Pumpkin

Canned pumpkin is one of the easiest pantry staples to cook with, but a few small moves make the difference between a rich, savory sauce and something that tastes like a candle. Here is what I have figured out.

• Grab the right can: You want the one that says 100 percent pure pumpkin, not pumpkin pie mix. Pie mix already has sugar and spices in it, so it will make your pasta taste like dessert. Read the label, they sit right next to each other on the shelf on purpose.
• Cook the puree for a minute first: Before you add any liquid, let the pumpkin sizzle in the pan with your onions and garlic for a minute or two. It deepens the flavor and cooks off that raw, slightly tinny taste straight from the can.
• Balance the sweetness: Pumpkin is naturally a little sweet, so savory dishes need something to push back. A squeeze of lemon, a splash of vinegar, plenty of black pepper, or a good handful of parmesan all do the job.
• Thin sauces with pasta water, not more cream: If your pumpkin pasta sauce is too thick, add a few spoonfuls of the starchy pasta cooking water. It loosens the sauce and helps it cling to the noodles without making everything heavier.
• Skip the pumpkin pie spice: Cinnamon and nutmeg belong in the dessert version. For dinner, reach for garlic, smoked paprika, chili flakes, sage, and thyme instead. A tiny pinch of nutmeg is fine in a creamy sauce, but that is the limit.
• Freeze what you do not use: Most recipes only need part of a can. Scoop the rest into an ice cube tray, freeze, and pop the cubes into a bag. One cube is about two tablespoons, perfect for stirring into a soup or oatmeal later.

Savory Pumpkin FAQs

Can you use canned pumpkin in savory recipes?

Yes, and it is one of the best ways to use it. Plain canned pumpkin puree is just cooked, blended pumpkin with nothing added, so it works like any other winter squash in soups, sauces, curries, and chili. Just make sure the can says pure pumpkin and not pie mix.

What is the difference between pumpkin puree and pumpkin pie filling?

Puree is only pumpkin. Pie filling is pumpkin plus sugar, salt, and pie spices, so it is already seasoned for dessert. If you use pie filling in a savory recipe it will taste sweet and off. Stick with plain puree for everything in this post.

What spices go with savory pumpkin?

Garlic, onion, smoked paprika, chili flakes, cumin, sage, thyme, and lots of black pepper. Curry powder and Thai curry paste are great too. Save the cinnamon and nutmeg for the pie, though a tiny pinch of nutmeg is nice in a creamy pasta sauce.

Can I use butternut squash instead of pumpkin?

Almost always, yes. Swap it one for one by weight. Butternut is a little sweeter and less watery, so roast and mash it first if the recipe wants puree. It is a good backup any time you cannot find canned pumpkin.
