Cabbage in the air fryer is not the same vegetable that comes out of a boiling pot. The edges char and go sweet, the middle stays tender, and the whole thing takes about fifteen minutes with almost no effort.

Air fryer cabbage is cabbage cut into wedges, steaks or ribbons, tossed with oil and seasoning, then cooked at high heat in an air fryer basket until the edges crisp. Below are the versions I make on repeat, plus the ones I go to on other blogs when I want something different.

How To Cook Cabbage In The Air Fryer
The basic method works for any of the recipes above.
- Cut the cabbage into wedges about one inch thick, or into steaks through the core so the leaves hold together.
- Toss or brush generously with oil, making sure it gets between the outer leaves.
- Season with salt, pepper and whatever else you like. Garlic powder and smoked paprika are my defaults.
- Air fry at 380F for 12 to 15 minutes, turning once halfway, until the edges are deeply browned and the thickest part gives easily to a knife.
My Best Tips For Crispy Air Fryer Cabbage
- Use more oil than feels right. Cabbage is mostly water and dry leaves will scorch before the middle softens. A proper coating is what gives you the crisp edge.
- Do not crowd the basket. Cabbage steams itself if the pieces overlap. Cook in two batches rather than one crowded one and the difference is obvious.
- Leave the core in for wedges. It is what stops the whole thing falling apart into loose leaves halfway through cooking.
- Season again at the end. A squeeze of lemon or a pinch of flaky salt after cooking wakes the whole dish up.
How long does cabbage take in the air fryer?
Twelve to fifteen minutes at 380F for wedges about an inch thick. Thinner ribbons are done closer to eight minutes, and a whole thick steak can need up to eighteen.
Do you need to preheat the air fryer for cabbage?
It helps. A preheated basket starts browning the cut surface immediately, which is where the flavour comes from. If your model does not preheat, add two or three minutes to the cook time.
Why is my air fryer cabbage soggy instead of crispy?
Almost always too little oil or too crowded a basket. Cabbage releases a lot of water, and if it cannot escape the cabbage steams. Cook in batches and oil it properly.
