I always have some kind of homemade fermented vegetable in my fridge, and this cabbage carrot sauerkraut is one I come back to again and again.
It's crunchy, tangy, budget-friendly, and made with just a handful of simple ingredients. I love adding carrot because it gives the sauerkraut a subtle sweetness and makes the jar look so much prettier.

If you're new to fermentation, don't worry. This is one of the easiest recipes you can make. Most of the work is just waiting and trying not to peek at the jar every few hours like I always do.

Why This Is On Repeat At My House
- I almost always have a jar of sauerkraut fermenting or sitting in the fridge.
- Partly because I grew up eating fermented foods, but also because homemade sauerkraut is so much cheaper than buying small jars at the store. Plus, I know exactly what's going into it.
- I also love that it fits into real life. Once the cabbage is packed into the jar, the fermenting process does most of the work for you.
- My boys aren't exactly asking for sauerkraut as an after-school snack, but they'll happily eat it alongside sausages, roasted potatoes, or tucked into sandwiches.
- One thing I learned from my first few batches: don't panic if things look a little strange during fermentation. Bubbles are normal. Slight cloudiness is normal. Fermentation is supposed to look alive.
