Ingredients

  • Boneless skinless chicken thighs or breast are both great here.
  • Garlic powder - essential aromatic without that peeling or chopping. 
  • Smoked paprika - for smoky flavor and vibrant color. Substitute with a mix of chili powder and cumin for a similar effect with slight taste variation.
  • Olive oil - we don’t need a lot here! Olive oil is best, but avocado or vegetable oil is fine too.
  • Mayonnaise - full-fat will make the richest and creamiest sauce, but light mayo will work too. 
  • Sweet chili sauce - essential for the bang bang sauce, it has a blend of sweetness with heat and combined with mayo tastes unbelievably good.
  • Sriracha - adds color and smokiness, you can replace it with other hot sauce like Valentina or Franks.
  • Honey - or maple or agave syrup (less sweet flavor). Honey helps to balance out the heat.

How To Make Bang Bang Chicken Skewers

  1. Mix together diced chicken, oil, paprika, garlic powder, salt, and pepper until the chicken is evenly coated.
  2. Thread 4-5 chicken cubes onto each skewer, working through them one at a time. Tip: To prevent skewers from burning, soak them in cold water for about 30 minutes before use.
  3. In a small bowl, stir together the mayonnaise, Thai sweet chili sauce, Sriracha, and honey until well combined, yielding approximately 1 ¾ cups of bang bang sauce.
  4. Divide the sauce in half, placing one portion in a separate bowl for later use. Use the remaining sauce to brush over the chicken skewers, ensuring an even coating.
  5. Preheat your air fryer for 5 minutes.
  6. Arrange the skewers in a single layer in the air fryer basket, working in batches if necessary depending on the size of your air fryer.
  7. Air fry at 400°F for 12-15 minutes, flipping the skewers halfway through. Ensure the chicken reaches an internal temperature of 165°F to ensure it's thoroughly cooked.
  8. Once done, transfer the skewers to a plate and generously brush them with the reserved bang bang sauce.

For a complete meal pair them with air fryer fries, marinated cucumber tomato salad, roasted asparagus and spicy skillet potatoes.

Oven Instructions

Preheat the oven to 400°F (200°C) and arrange the skewers on a lined baking sheet.

Bake for 15-20 minutes, flipping halfway through, until the chicken is fully cooked.

Grilling Instructions

Assemble the skewers as directed and grill over medium-high heat for 6 to 8 minutes per side.

Baste towards the end until the sauce caramelizes and the chicken reaches 165°F internally.

Transfer to a platter, baste with reserved sauce, and serve.

Tips

  • Cut chicken thighs into evenly sized cubes for uniform cooking to avoid undercooked or overcooked pieces.
  • You can, but you don’t have to marinate chicken slices for at least 30 minutes to enhance flavor and juiciness.
  • Prepare Bang Bang sauce ahead to allow flavors to meld.
  • You can test the chicken for doneness: use kitchen thermometer to register an internal temperature of 165°F (74°C).

Freezing And Storing Instructions

  • To Store. To store leftover Bang Bang Chicken Skewers, place them in an airtight container in the refrigerator for 2-3 days.
  • To Reheat. For reheating, place the skewers on a baking sheet and bake in a preheated oven at 350°F (175°C) for 10-15 minutes, or until heated through.
  • To Make Ahead. Prepare chicken skewers and bang bang sauce in advance. Refrigerate assembled uncooked skewers for 2-3 days or freeze for up to 3 months. Thaw in the refrigerator overnight before cooking. Store bang bang sauce in the refrigerator for up to a week.
