Cabbage ''Rice''

This cabbage rice looks just like real rice - a light, low-carb, and veggie-filled dish that's super satisfying! Serve cabbage rice with your choice of protein or enjoy it as a vegetarian meal!

Cabbage Rice

This recipe is similar to my napa cabbage stir fry or sauteed cabbage however the method is different and the cabbage rice will have a crisp texture compared to those two.

You can even add some protein and make a ground chicken and cabbage stir fry.

Ingredients

  • Cabbage - green cabbage is my go-to, but feel free to use red cabbage. In this case I’d skip the passata and simply use some bone broth or vegetable stock instead. You can also use a pre-shredded coleslaw mix.
  • Garlic and onion serve as the aromatic foundation this ‘’rice’’ deserves!
  • Passata - the rice cooking liquid, tastier than water or broth! 

How To Make Cabbage Rice + Step-by-Step Photos

  1. Shred cabbage using a box grater or for a faster option, use a food processor and pulse until the cabbage resembles rice.
  2. In a skillet, heat olive oil over medium heat, then sauté onion and carrot. Season with spices, salt, and pepper, and cook until softened. Add garlic and cook for another 30 seconds.
  3. Stir in passata and shredded cabbage, and cook for 15 minutes, stirring occasionally.
  4. Serve garnished with fresh parsley and some butter on top.

Julia's Tip

Cabbage is quite forgiving when it comes to cooking time, but for optimal tenderness, aim for at least 15 minutes.

Freezing And Storing Instructions

  • To Store. Transfer the cabbage rice into an airtight container and refrigerate for 3-4 days.
  • To Reheat on the stovetop, warm low and slow for 5-10 minutes, stirring occasionally to avoid burning and ensure even heating.
  • To Reheat in the microwave, heat for 1-2 minutes. Both methods are suitable for reheating.

  • 1 pound cabbage
  • 2 tablespoon olive oil
  • ¾ cup yellow onion, diced
  • ½ cup carrot, grated
  • 1 teaspoon salt
  • 1 teaspoon ground smoked paprika, or regular
  • 1 teaspoon minced garlic, fresh
  • ¼ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • 3 tablespoon fresh parsley, chopped
  • ¾ cup passata

INSTRUCTIONS

  • Stir in passata and shredded cabbage, and cook for 15 minutes, stirring occasionally.
    ¾ cup passata
  • Serve garnished with fresh parsley and some butter on top.

NOTES

    Anybody tried adding chicken or tofu to this? Looking for ways to pump up the protein in the cabbage stir fry rice. Cheers!

      Chicken works wonderfully! It adds a nice lean protein to the dish. Just cook it thoroughly before adding to the stir fry.

    Really appreciated Julia's tip on cabbage cooking times. I've been looking for ways to sneak more veggies into the kids' meals and this cabbage stir fry rice sounds perfect.
