Let the bread cool completely before slicing - this is what sets the crumb. Cutting it too early traps steam inside, which makes the texture gummy instead of soft and fluffy.

Tips

  • Use smooth cottage cheese. Blend it well so it disappears into the batter. This is what gives you an even, soft crumb.
  • Thick batter is normal. It should be scoopable, not runny. If it feels too loose, the loaf won't hold structure.
  • Don't overmix. This is where people go wrong. Overmixing = dense, heavy bread.
  • Watch the center, not just the top. Cottage cheese breads can look done outside but stay soft inside. Bake until a skewer comes out clean.
  • Let it cool completely. Slicing too early will compress the crumb and make it gummy. This step matters more than you think.

Storing Leftovers

  • To Store. Keep in an airtight container at room temperature for up to 3 days. For best texture, wrap the loaf or slices in parchment first, then place in a container - this helps prevent excess moisture buildup that can make the bread slightly sticky. If your kitchen is warm or humid, store it in the fridge instead to avoid it going soft too quickly.
  • To Freeze. Slice the bread first, then wrap individual slices tightly in plastic wrap and place in a freezer bag. This way you can grab just what you need.

  • ⅔ cup cottage cheese
  • ⅓ cup superfine sugar
  • ½ cup nuts or chocolate chips
