Pancakes, waffles, and French toast are what my family actually asks for on weekend mornings. These are all made from scratch, and a few use whole wheat or almond flour if you want something a little more filling.

For mornings when I want something more filling, I go savory. Eggs, breakfast casseroles, and tacos are all in this lineup, and most of these reheat well if you want to make breakfast ahead for the week.

Meal Prep Breakfast Tips
A little work on Sunday means real breakfast every weekday. Here is how I actually keep up with it.
- Pick one make ahead format and batch it. Egg bites, overnight oats, baked oatmeal, breakfast burritos, or muffins. One tray or one big jar on the weekend covers most of the week.
- Know how long each thing lasts. Egg bakes and casseroles keep about four days in the fridge. Overnight oats and chia puddings last four to five. Muffins and quick breads are best in three, or freeze them.
- Freeze in single servings. Wrap breakfast burritos, egg bites, and muffins individually so you can grab one. Reheat from frozen in the microwave, or move one to the fridge the night before.
- Make smoothie freezer packs. Portion fruit and a handful of greens into bags. In the morning, dump a bag into the blender with your liquid and go.
- Slightly underbake anything you will reheat. Egg bites, baked oatmeal, and casseroles keep cooking when you warm them back up, so pull them a couple of minutes early to keep them from drying out.
- Keep no cook backups stocked. Hard boiled eggs, cut fruit, yogurt, and nut butter mean there is always something even on the weeks you did not prep.
- Reheat oatmeal with a splash of liquid. Baked or overnight oats firm up in the fridge. Stir in a little milk or water before microwaving and it tastes just made.
