This easy vegetarian cabbage noodle stir fry is the kind of dinner I lean on when the fridge looks a little empty but I still want something warm and satisfying. Tender noodles, crisp-tender cabbage, sweet carrots, and a simple garlic-ginger sauce come together in under 30 minutes.

It's perfect for busy weeknights, meatless Mondays, or those evenings when cooking feels like one more thing on an already long list.
I started making versions of this recipe years ago as a way to use up half a head of cabbage sitting in the fridge. It quickly became one of those "why don't I make this more often?" dinners.

Ingredient Notes
- Egg noodles or rice noodles - Use whichever you prefer. Egg noodles give the dish a heartier feel, while rice noodles make it lighter and naturally gluten-free.
- Green cabbage - The star ingredient. Green cabbage becomes slightly sweet as it cooks while keeping a bit of crunch.
- Carrot - Adds natural sweetness and color. Matchsticks save time, but grated carrots work well too.
