Meatloaf Recipe in Air Fryer

This recipe uses simple pantry ingredients and gives you that classic comfort food flavor with a juicy center and slightly caramelized glaze on top. Think tender meat, rich savory flavor, and a sticky-sweet finish.

Ingredients

  • Ground beef – 85/15 is the sweet spot. It has enough fat to stay juicy without turning greasy. If you go leaner like 90/10, it can dry out faster. If you go higher fat like 80/20, you may get excess grease in the air fryer.
  • Breadcrumbs (panko) – Keeps everything soft and tender. Regular breadcrumbs work too.
  • Milk – Soaks into breadcrumbs and keeps the meatloaf juicy. This step really matters.
  • Worcestershire sauce – Adds that deep, savory flavor. If you can find a good quality one, it’s worth it.
  • Onion + garlic – Builds flavor. Cooking the onion first makes it sweeter and softer.
  • Ketchup + BBQ sauce – The glaze is everything. Sweet, tangy, and slightly smoky.

How To Make Meatloaf

  1. Preheat air fryer: Set to 175°C / 350°F so it’s ready when you are.
  2. Cook onion: Heat olive oil in a pan and cook onion for 2–3 minutes until soft and slightly translucent. This prevents crunchy bits in your meatloaf.
  3. Mix base: In a large bowl combine breadcrumbs, milk, parsley, garlic, egg, Worcestershire sauce, ketchup, salt, pepper, and seasoning. Let it sit for 1 minute so breadcrumbs absorb the liquid.
  4. Add beef: Add ground beef and cooked onion. Mix gently until just combined. The mixture should feel soft but hold shape.
  1. Shape loaves: Divide into 2 small loaves. Smooth edges so they don’t crack. About 5 x 2 inches.
  2. First cook: Place in air fryer and cook for 15 minutes. You’ll see it firm up and slightly brown.
  3. Add glaze: Mix ketchup and BBQ sauce. Spread on top generously.
  4. Finish cooking: Cook another 10 minutes until internal temp reaches 74°C / 165°F.
  5. Rest: Let sit 5–10 minutes. This keeps juices inside.
  6. Slice and serve: Brush with extra glaze and sprinkle parsley.

Tips

  • Go easy when mixing – once it comes together, stop. Overworking it is what makes meatloaf tough instead of tender.
  • Let the breadcrumbs sit in the milk for a minute – this is what gives you that soft, juicy texture instead of dry crumbs.
  • Use a thermometer if you can – 74°C / 165°F is that perfect sweet spot where it’s cooked but still juicy.
  • Give it a few minutes to rest – it makes slicing so much easier and keeps all those juices inside.
  • Need a shortcut – grab pre-chopped onion and save yourself a step.

Don’t Make These Mistakes

  • Mixing too much – it might seem harmless, but it’s the quickest way to end up with a dense meatloaf
  • Skipping the onion step – those few minutes of cooking really change the flavor and texture
  • Not preheating the air fryer – this is a big one, it affects how it cooks right from the start. This is where things usually go wrong. If the air fryer isn’t hot, the meatloaf won’t cook evenly or get that nice outside texture.

Storing Leftovers

  • To Store. Keep in airtight container in fridge up to 4 days.
  • To Freeze. Wrap slices individually and freeze up to 2 months.
  • To Make Ahead. Shape loaves and refrigerate uncooked up to 24 hours.
  • To Reheat. Air fryer at 160°C for 5–7 minutes or microwave gently.

  • Lighter option. Use ground turkey, just reduce cook time slightly

INGREDIENTS
  

  • 1 pounds lean ground beef
  • ½ cup breadcrumbs, panko
  • ¼ cup finely chopped onion
  • 2 tablespoon milk
  • 2 tablespoon olive oil, for frying onion
  • 2 tablespoon fresh parsley, or 1 tablespoon dried
  • 1 garlic clove, minced
  • 1 egg yolk, or whole egg
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt, to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup

Topping

  • ¼ cup ketchup
  • ¼ cup BBQ sauce

INSTRUCTIONS
 

  • Preheat air fryer to 175°C / 350°F. In a pan with oil cook onion until soft about 2–3 minutes:
    ¼ cup finely chopped onion, 2 tablespoon olive oil
  • In a large bowl mix breadcrumbs, milk, parsley, garlic, egg, Italian herbs, salt, pepper, Worcestershire sauce and ketchup.
    ½ cup breadcrumbs, 2 tablespoon milk, 2 tablespoon fresh parsley, 1 garlic clove, 1 egg yolk, ½ teaspoon Italian seasoning, ½ teaspoon salt, 1 tablespoon Worcestershire sauce, 1 tablespoon ketchup, ¼ teaspoon black pepper
  • Add ground beef and cooked onion mix gently until combined. Divide into 2 loaves and shape smoothing edges. Cook in air fryer for 15 minutes.

  • Cook another 10 minutes until internal temp reaches 74°C / 165°F.

NOTES

  • First slices might crumble a little – that’s actually a good sign, it means the meatloaf is nice and tender.
  • Use a wide spatula to lift it out – it’s softer than it looks and this helps keep it intact.
  • Let it rest before slicing – it firms up just enough so you get clean slices without falling apart.
  • I almost always make two smaller loaves instead of one big one, they cook more evenly and faster.
  • The smell while this cooks is honestly the best part, it feels like a cozy home dinner.
  • I like adding a little extra glaze at the end so it gets that sticky, slightly caramelized top. 
  • If the mix feels too soft, I just sprinkle in a bit more breadcrumbs until it holds shape.
