Ingredients for Saucy Firecracker Meatballs
For the Spicy Meatballs:
- Ground beef or chicken - Start with 1 pound of lean ground beef or chicken. While ground chicken is popular for this recipe, I prefer beef for its rich flavor and texture.
- Plain breadcrumbs - Use plain breadcrumbs to help bind the meatballs together. Panko breadcrumbs work well too for a lighter texture.
- Green onions - You’ll need ¼ cup of finely chopped green onions for a mild, fresh flavor, plus extra for garnish.
- Garlic - Use minced garlic to add a punch of flavor. Garlic makes everything better!
- Low-sodium soy sauce - Add soy sauce for a savory, umami kick. Gluten free soy sauce alternatives like coconut aminos or tamari are excellent here too.
- Sriracha sauce - 2 tablespoons of Sriracha give your meatballs a spicy kick. You can adjust this based on your spice preference.
- Honey - 2 tablespoons of honey balance the heat with a touch of sweetness.
- Rice vinegar - A tablespoon of rice vinegar adds a tangy note that brightens up the flavors.
- Sesame oil - 1 teaspoon of sesame oil enhances the overall taste with a hint of nuttiness.
- Ground ginger - Essential ingredient for Asian meatballs!
- Red pepper flakes - If you want extra heat, include ¼ teaspoon of red pepper flakes.
- Fresh parsley - for garnish but you can also mix some parsley into the beef mixture.
For the Creamy Firecracker Sauce:
- Mayonnaise - Perfect creamy base for the sauce.
- Sour cream - Add ¼ cup of sour cream for extra creaminess and tang.
- Sriracha sauce - Use 2 tablespoons of Sriracha to spice up the sauce.
- Honey - 1 tablespoon of honey sweetens the sauce.
- Rice vinegar - Rice vinegar brightens the sauce with a little zing.
- Garlic powder - Garlic powder rounds out the flavor profile.

How To Make Firecracker Meatballs
- Preheat the oven to 350°F. Line a baking sheet with parchment paper or grease a large baking dish.
- In a big bowl, mix the ground meat, breadcrumbs, green onions, and minced garlic. Use your hands to combine everything well.
- Shape the mixture into 1½-inch meatballs and place them on the baking sheet.
- In another bowl, whisk together soy sauce, Sriracha, honey, rice vinegar, sesame oil, ground ginger, and red pepper flakes. This is the firecracker sauce.
- Brush the meatballs with the firecracker sauce, saving some for dipping if you'd like.
- Cook meatballs for 30-35 minutes, until they’re cooked through and golden brown.
- While the meatballs bake, make the creamy sauce by mixing mayonnaise, sour cream, Sriracha, honey, rice vinegar, garlic powder, and salt.
- Serve the meatballs with the savory firecracker sauce on the side for dipping, or drizzle the sauce on top. These meatballs are so good when served with lots of freshly chopped parsley, green onions, or sesame seeds. Enjoy!
Why did my meatballs come out tough? Tough meatballs usually happen when you overmix the meat mixture or cook them for too long. Mix gently and cook the meatballs as per instructions. They should be juicy inside!
Tips for Perfect Saucy Firecracker Meatballs
- Don’t overcook. Keep an eye on the meatballs while they cook. They’re ready when there’s no pink inside, which keeps them juicy and tender.
- Try different proteins. If you prefer a different meat, feel free to swap ground beef for ground chicken, turkey, or pork. Just adjust the cooking time as needed.
- Adjust the spice level. These meatballs have a kick! If you want them milder, cut back on the red pepper flakes or use a milder sauce.
- Modify the spiciness of the creamy sauce by adjusting the amount of Sriracha sauce to suit your preference.
- To give the meatballs more texture, you can add diced bell peppers, shredded carrots, or water chestnuts.
- For even cooking, make sure the meatballs are uniform in size and shape.
Sides That Go Well With Firecracker Meatballs
Firecracker Meatballs are a flavorful dish that pairs wonderfully with a variety of sides.
Here are some great options to complement your meal:
- Creamy cucumber salad, or try this Asian and Korean salad.
- Basmati rice or yellow rice: The fluffy texture and mild flavor of rice soak up the delicious sauce perfectly. For a low carb option, try my superb cauliflower rice. Cilantro lime rice adds an extra zing!
- Noodles
- Lettuce Wraps: For a lighter option, skip the rice and use large lettuce leaves to create refreshing wraps.
- Roasted broccoli or Brussels sprouts
- Sautéed green beans
- Pickled daikon radish
Storing Saucy Firecracker Meatballs
- To Store. Keep any leftover meatballs in an airtight container in the refrigerator for up to 2-3 days. They’re best enjoyed fresh, but they still taste great as leftovers!
- To Freeze. Place the leftover meatballs (without the sauce) in a freezer-safe container. They can be frozen for up to 3 months.
- Make Ahead. You can prepare the meatballs in advance (2-3 days) and store them in the refrigerator or freezer. Just cook them when you're ready to serve.
- To Reheat. To warm up the meatballs, you can microwave them for 10-15 seconds or heat them in a skillet over medium heat until warmed through.
Variations for Saucy Firecracker Meatballs
- Wet your hands. To prevent the meatball mixture from sticking to your hands, hold a small bowl with cold water nearby or lightly oil them before rolling the meatballs.
- Don’t overmix. For tender meatballs, mix the ingredients just until combined. Overmixing can make them tough and rubbery.
- Uniform size. Use a scale to ensure your meatballs are the same size. Each meatball should be about 2 ounces (45 grams) for even cooking.
