Strawberry Poppyseed Salad Dressing (Strawberry Vinaigrette)

The taste of this strawberry vinaigrette is so luxurious that you’ll love adding it to many of your recipes. It instantly brightens any dish.

Strawberry Poppyseed Salad Dressing (Strawberry Vinaigrette)

A fun, bright pink strawberry vinaigrette is delicious when added to many dishes and will please even picky eaters.

Strawberry Poppyseed Salad Dressing (Strawberry Vinaigrette)

Tips & Variations

  • Add more apple cider vinegar (about 1-2 tablespoon extra if you like the taste). It may taste very strong when you taste-test it, but once added to the salad, it all comes together and balances the flavors.
  • Sweetener - Sugar or sweetener is optional in this recipe, but it creates a good balance between sour, salty, and sweet. I usually try to avoid granulated white sugar and love to use muscovado or coconut sugar instead, not only it is a healthier choice but thanks to the texture, it dissolves in the food or drinks much better. The food simply tastes better with a light caramel flavor (depends on the amount you’ll be adding of course). Alternatively add your favorite sweetener, stevia, honey, agave syrup, maple syrup, or else.

Different Ways To Use Strawberry Tops

Always save strawberry tops - don’t throw them away! Here's what you can make with them:

  • Make strawberry-infused water.
  • Don’t have a plan to use those tops right now? Place them in an airtight container and keep them in the fridge for up to a few days, or in the freezer for a few months, then pull them out when you’re ready to use them. 
  • Another great way to use them is to infuse your favorite spirit with them (i usually keep them in my rum for few days).
  • Add the tops to your favorite smoothies to get a little pink hue and hint of strawberries.

Strawberry Vinaigrette Uses

Here are a few of my tried and favorite foods to enjoy with the creamy dressing:

  • Roasted vegetables like carrot, use vinaigrette instead of aioli in air fryer Brussels sprouts, beetroot (try adding a drizzle on top of beet salad), bell peppers, zucchini, broccoli.
  • Strawberry Arugula Salad.
  • To serve with a cheese platter or board with different cheeses.
  • Dip fruits in it like apples, pears or peaches.

INGREDIENTS
  

  • 1 ½-2 cups strawberries, hulled and stems removed
  • 1 tablespoon light muscovado sugar, or granulated white sugar
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon Himalayan pink salt
  • Black ground pepper to taste
  • 3-5 large basil leaves
  • 2 tablespoon poppyseed
  • 3 ½ tbsp olive oil

INSTRUCTIONS
 

  • In a blender or using an immersion blender blend all dressing ingredients except poppyseeds and blend until smooth and creamy. Add the seeds and let stand in the fridge for 10-20 minutes.
  • Remove from the fridge and serve over favorite summer salad, grilled halloumi cheese, white fish, and chicken.

NOTES

Makes 1 cup of dressing. Depending on serving amounts, this should be enough for 4-5 individual servings as a topping for salad dressing.
This strawberry poppyseed salad dressing will keep in the fridge for up to 2 weeks. Give it a good shake or stir before using.
Best served with my Strawberry Goat Cheese Salad.
