The golden, crispy outside gives way to a melt-in-your-mouth feta center, perfectly complemented by a touch of lingonberry or cranberry sauce.

- Don't skip the cranberry sauce - The cranberry sauce adds a perfect sweet-tart contrast to the salty feta, so don’t skip it! If you prefer a different flavor, try using fig jam or a touch of honey instead.
- Use fresh feta - If you can get Greek feta, it will give you a creamier filling, making the rolls even more delicious.
- Tortillas - Opt for soft, thin tortillas for easy rolling. Flour tortillas are a great choice for a light, crispy texture. You can save the corn tortillas for tostadas or tortilla soup.
- Sesame seeds - These add a nutty crunch on top, but you can skip them if you prefer a simpler finish or substitute with poppy seeds for variety.

How To Make Crispy Feta Rolls
- Prepare the feta: Cut the feta into 4 equal pieces and blot with paper towels to remove excess moisture.
- Assemble the rolls: Lay out 4 tortillas. Place one piece of feta on each, then sprinkle with a pinch of oregano and red pepper flakes. Lightly spray with olive oil and add 1 tablespoon of cranberry sauce on top.
Julia's Tip: I love adding a drizzle of honey when serving, so yummy!
- Roll the tortillas: Roll each tortilla like a burrito.
- Prepare the egg wash: Mix the egg yolk and milk. Using a pastry brush, brush the tops and edges of the wraps with the egg mixture. Sprinkle with sesame seeds.
- Air fry: Place the rolls in the air fryer basket and cook at 356°F (180°C) for 9-10 minutes, or until golden brown.
Tips
- The feta filling may try to escape while baking, so be sure not to overfill or wrap the rolls too tightly. A little spill doesn’t affect the deliciousness!
- Don't skip the egg wash! This is what makes the rolls beautiful golden brown and super crispy!
- For cranberry sauce, you can go for classical or cranberry orange sauce. If you live in Europe or have access to lingonberries, this tart berry sauce is excellent for adding some sweet and sour flavor!
Oven-Baked Feta Rolls:
If you prefer baking these in the oven, preheat to 350°F (180°C) and bake for 20-25 minutes, or until golden and crispy.
Freezing And Storing Instructions
- To Store. Once the rolls have cooled, store them in an airtight container in the fridge for up to three days.
- To Reheat. To reheat, pop them in the air fryer or oven at 350°F for 3-5 minutes to ''refresh'' the tortilla wrap.
