- Unsweetened coconut milk adds a creamy texture and rich coconut flavor to your virgin Pina Coladas. Shake the milk well before adding the regular coconut milk to the mix. Coconut cream can be used for a thicker and richer result. Coconut extract can also be used for a more robust coconut flavor.
- Fresh cream - I love including fresh cream for an even more creamy luxurious texture and thickness. This can be omitted if you choose to use coconut cream.
- Lime juice - Freshly squeezed from half of a lime. Juice from this lime adds a zesty tang and balances the sweetness.
- Honey - A natural sweetener to enhance the flavor without overpowering it. You could use agave syrup, maple syrup, or a simple syrup instead.
- Ice cubes - You will only need a handful.

- Blend: Combine all ingredients, except the ice, in a blender and blend until smooth.
- Add Ice: Add a few ice cubes to the blender and blend until the ice is crushed.

- ⅓ cup heavy cream, or coconut cream
- lime juice from half lime
- 2 tablespoon honey
- Ice cubes, handful
- 3-4 glazed cherries, for garnish
INSTRUCTIONS
- In a blender, combine the pineapple chunks, coconut milk, fresh cream, lime juice, and honey.
- Add a few ice cubes to the blender and blend until the ice is crushed.
- Taste the mixture and adjust the sweetness or tartness as needed by adding more honey or lime juice.
