Which Pears Are Best For Roasting?
When it comes to baking pears, Bosc pears are my top pick.
They hold their shape beautifully and have a firm texture, making them perfect for roasting or poaching—like in my Amaretto Poached Pears recipe.
If Bosc pears aren’t available, Anjou and Seckel pears are great alternatives.
While they bake a bit softer, they still maintain their shape and add great flavor, especially with the skin on.
For the best results, choose pears that are slightly ripe but still firm, so they soften to the perfect texture without turning mushy.
Bartlett pears can work too, but they tend to get a bit mushy when baked.
Ingredients
- Pears – Choose firm varieties like Bosc or Anjou, which hold their shape well during baking. These pears are ideal for this recipe as they won’t get mushy and can withstand the heat.
- Arugula – Adds a fresh, peppery bite to contrast the richness of the blue cheese. The arugula also brings a beautiful green color to the dish.
- Extra virgin olive oil – A light spray of olive oil enhances the arugula's flavor, keeping it fresh and slightly crisp without overwhelming the other ingredients.
- Blue cheese (Gorgonzola) – I used Gorgonzola for its creamy texture and bold, tangy flavor.
- Walnuts – Or pecans. If you can't have nuts, crunchy healthy homemade granola (without nuts) is an excellent alternative.
- Honey – A drizzle of honey provides a sweet, floral finish to the pears, balancing the savory elements like blue cheese and red chili flakes.
- Red chili flakes – Optional, this helps to balance the sweet and tangy flavors.
- Salt – Like with most desserts, salt helps to intensify the flavors and will not make your roasted pears salty.
- Dried cranberries – Chopped dried cranberries bring a burst of tartness and color to the dish, making each bite even more exciting. They also add a nice chewy texture alongside the crunchy walnuts.

How To Make Roasted Pears with Blue Cheese
- Preheat your oven to 400℉.
- Slice the pears in half lengthwise and scoop out the core and seeds. Place the pears in a cast iron skillet or baking dish, cut side up. Drizzle with olive oil, then flip them cut side down.
- Bake the pears for 15 minutes.
- Remove the skillet from the oven and turn the pears cut side up. Fill each pear with blue cheese, walnuts, and cranberries. Bake for another 7–8 minutes, until the cheese starts to melt.
- On a serving platter, arrange a bed of arugula and lightly spray it with olive oil. Place the baked pears on top, drizzle with honey, and garnish with more walnuts, cranberries, and pecans.
- Optional: Instead of dried cranberries, add a dollop of lingonberry or cranberry sauce - about 2 teaspoons per pear—for a festive twist.
Pro Tips for Success
- Select firm pear varieties to help them maintain their shape during baking.
- Pick pears that are ripe but still firm for the best texture.
- Choose large pears, as they will shrink quite a bit as they bake.
- Line the baking dish with parchment paper for easy clean-up.
Tips for Choosing the Best Pears
When choosing pears for baking, look for varieties that are firm but ripe.
Bosc and Anjou pears are perfect for baking because they hold their shape well and won’t get mushy.
You want pears that are slightly soft to the touch but not too squishy—this means they’re ripe and ready for baking. Avoid pears that are too hard, as they may not soften enough during baking.
How to Serve Caramelized Pears
- Serve these caramelized pears on their own or add a little extra flavor! My favorite way is to drizzle some caramel sauce, you can do that as an extra or instead of honey.
- You can also top them with Greek vanilla yogurt, vanilla ice cream.
- These pears are great hot or cold. They’re perfect in oatmeal, yogurt, or as a filling for tarts, pastries, or a topping for pancakes and waffles.
- Expand on other ways to use pears in different recipes. For example, they can be added to salads, baked into pies, or used in savory dishes like salads with goat cheese or as a side to roasted meats.
How To Make This Recipe Ahead
You can easily prepare these caramelized pears in advance!
Just bake them the day before, let them cool, and store them in an airtight container in the fridge.
When you’re ready to serve, simply warm them up in the microwave.
This is a great way to save time if you're preparing for a party or busy week ahead!
Freezing and Storing Baked Pears With Blue Cheese
- To Store. Place the baked pears in an airtight container and refrigerate for up to three days. This keeps them fresh while retaining their flavor and texture.
- To Freeze. Wrap each pear half individually in plastic wrap and place them in a freezer-friendly bag. This prevents freezer burn and allows you to enjoy them later.
- To Reheat. For the best results, reheat the pears in a preheated oven at 350°F (175°C) for about 10 minutes. This brings back their warmth and deliciousness.
Variations and Substitutions for Baked Pears With Blue Cheese
- Cheese - If blue cheese isn't your preference, try brie, goat cheese or gorgonzola for a milder flavor.
- Nuts - Swap walnuts for pecans or almonds for a different crunch.
- Flavorings - Add a sprinkle of cinnamon or nutmeg for a warm, spiced twist.

NOTES
- To make a caramelized version of this dish, sprinkle some brown sugar over the pears before baking. This adds a deeper level of sweetness and creates a beautiful caramel color.
- For an added crunch, top the baked pears with chopped walnuts or almonds before serving. The nuttiness pairs well with the creaminess of the cheese and adds texture to each bite.
- Don't limit yourself to just blue cheese - try experimenting with other flavor combinations like brie and honey or gorgonzola and dried cranberries for a seasonal twist. The possibilities are endless!
