Beet Salad Recipe Ingredients

  • Red Beetroot - Earthy and sweet, goes perfectly with creamy goat cheese.
  • Salad Greens - A fresh and vibrant mix of greens provides a crisp base for the salad.
  • Goat Cheese - Creamy and tangy, this goat cheese adds a rich, savory touch. Feta cheese is another my favorite taht I used in this beet salad.
  • Walnuts - if you have enough time before dinner, toast the nuts ina dry skillet for 1-2 minutes until golden brown.
  • Red Wine Vinaigrette - A tangy and slightly sweet dressing that complements the salad’s ingredients. If you don't have it, you can use balsamic vinegar, a drizzle of balsamic glaze to top up the salad or just olive oil with some sort of light vinegar.
  • Olive Oil - Adds a smooth, rich layer of flavor to the roasted beets. Choose good quality olive oil for salads.
  • Salt and pepper - season your salad generously!

🐝 Tip: I kept it salad light and fresh. However a small drizzle of maple syrup or honey to the dressing will enhance the overall taste so much MORE!

How to Roast Beets for Salad:

  1. Preheat the oven to 400°F (200°C).
  2. Put the beetroot slices on a baking sheet and drizzle them with olive oil. Roast them in the oven for 20-25 minutes until they’re soft.

For Salad:

  1. In a big salad bowl, mix the salad greens, roasted beetroot slices, crumbled goat cheese, and chopped walnuts.
  2. Pour the red vinaigrette over the salad and toss everything together. Add salt and pepper to taste.
