Ingredients
- Chicken - I've used boneless skinless chicken breast in this balsamic chicken recipe, but you could use boneless skinless chicken thighs instead if you prefer.
- Olive oil - Use high-quality olive oil to drizzle over the chicken pieces.
- Seasoning and spices - I've used Italian seasoning, salt, cracked pepper, and smoked paprika to flavor this dish. These spices and seasonings are likely already in your pantry.
- Minced garlic—Freshly minced garlic always provides the best flavor, although you can use pre-minced garlic if necessary.
- Tomatoes - Use juicy grape tomatoes or cherry tomatoes, halved. Sundried tomatoes are another option.
- Balsamic vinegar - This baked chicken breast recipe wouldn't be the same without this crucial ingredient! You can also make a batch of my balsamic glaze and use it instead of balsamic and brown sugar in this recipe.
- Brown sugar - I've used packed brown sugar to balance the sharp balsamic chicken marinade. Feel free to use honey instead for a honey balsamic chicken reduction.
- Mozzarella cheese—Always shred your cheese from a block for the best flavor and to ensure that it melts well. Crumbled feta cheese can also be added as a topping to this easy chicken dish.
- Herb - Use freshly chopped parsley or basil as a light garnish to this balsamic vinegar chicken breast recipe.

How To Make This Oven Baked Balsamic Vinegar Chicken
- Season the chicken breast: Place the breasts in a baking dish and drizzle them with olive oil. Sprinkle the seasonings and spices over and rub them into the meat. You can use 8 or 9-inch baking dish that can hold about 2 quarts.
- Add the tomatoes: Place the tomatoes around the chicken breasts.
- Make the balsamic marinade: Combine the ingredients for the balsamic vinaigrette marinade in a small bowl and then pour it over the chicken, turning it over to ensure the sauce covers all sides.
- Bake the chicken: Bake the chicken in the preheated oven for 20-25 minutes at 430°F.
- Top with cheese: Remove the chicken from the oven and sprinkle the fresh mozzarella cheese over it. Return the chicken to the oven and heat it under the broil (or grill) setting for 4-5 minutes.
- Garnish and serve: Garnish with freshly chopped parsley and serve the chicken with your favorite vegetable side dish.
Tips
- Shredded cheese - Avoid packed pre-shredded mozzarella cheese, as it doesn't have the same flavor as fresh mozzarella.
- Balsamic glaze - Feel free to follow my simple balsamic glaze recipe for this balsamic chicken breast dish.
- Internal temperature - Use a meat thermometer to check the internal temperature of the chicken. This is particularly helpful if you need to know whether the chicken is ready. Insert the instant read thermometer into the thickest part. It's ready when it reads 165 degrees F.
- Uniform size - Try to use the same size and thickness of chicken breasts so that they cook evenly and at the same rate. You can use a meat mallet if needed.

Freezing And Storing Instructions

- 1 pinch cracked pepper, or to taste
- 2 teaspoons minced garlic
- 1 cups grape tomatoes, or cherry tomatoes, halved
- 2 tablespoons balsamic vinegar
- ½ tablespoons brown sugar , packed
- ½ cup mozzarella cheese , shredded
- 1 tablespoons fresh parsley chopped, or basil, to garnish
- ½ teaspoons smoked paprika
INSTRUCTIONS
- Preheat your oven to 220°C (430°F).
- Place the chicken breasts in a baking dish and drizzle with olive oil. Season generously with Italian seasoning, salt, pepper, and paprika.
- Rub the seasonings evenly over each breast, then arrange the tomatoes and red onion around the chicken in the dish.
- In a bowl, whisk together the balsamic vinegar, sugar, and garlic until well combined. Pour this mixture over the chicken breasts, turning each breast to ensure they are evenly coated in the sauce.
- Bake the chicken in the preheated oven for 20-25 minutes, adjusting the time based on the thickness of your chicken breasts, until they are no longer pink in the center.
- Sprinkle the chicken with cheese and broil (or grill) for 4-5 minutes, or until the cheese is melted and golden.

- I prefer to use fresh mozzarella cheese for this recipe as packet mozzarella doesn't have the same effect.
