How to Build a Wing Spread
- Follow the one, one, one rule. One thing to dip, one thing crunchy, one thing carby. Everything after that is extra.
- Bake or air fry the sides. The oven belongs to the wings. Anything that competes for oven space should go in the air fryer or on the stove.
- Make the cold stuff the night before. Slaw, potato salad, pasta salad, and cold dips all hold overnight. Dress the slaw and salads right before serving.
- Put out more than one sauce. Ranch and blue cheese are the defaults, but an Alabama white sauce or a dill pickle dip gives people a reason to keep eating.
- Cool it down somewhere. A crisp salad or a slaw next to hot wings is not optional. It is the thing that lets people keep going.
- Count on eight to ten wings per person plus two or three sides. Lean heavier on fries and mac and cheese if wings are the whole meal.
